Finally got around to trying the "Wild Tree Purple Moonlight White Tea from Jinggu" in my latest YS order and it's probably one of the best teas I've ever had so far, at least in my short time of getting into it. Never had one so sweet and fruity with such a strong, long lasting aftertaste. The Honey Orchid Aroma Dan Cong is a close second.

Did anyone ever try this contraption? Magnectic ball valve to release the precious from the leafes. Upper glass holds 440ml, perfect for 2-3 people gong fu.
I'm sceptical whether the valve will clog up when leafes get below the ball.

My Yunomi order came in and I'm slowly working through it all... every tea's very good but I'm having trouble telling them apart. Japanese tea still feels a little alien to my palate and hard to clarify. It would be consistent with the Japanese science-not-art approach, though, that the good teas are fundamentally the same as the mediocre ones but quantitatively closer to perfection. For some reason these new matchas produce a way more positive sensation than the grocery store equivalent I'd been drinking- that one feels kind of edgy and these induce a smooth little high, so presumably Yunomi's are much richer in theanine. Now I need to think of kind of dessert to make that would use up the rest of that old matcha I don't want to drink. Something with walnuts? White chocolate and strawberries?

I remember liking that stuff; it was like a mellower and more balanced version of their "Sweet Ya Bao", which is tasty but a little too sweet, and lacking astringency or bitterness to counter it.
Taiwan Sourcing sadly shut down, otherwise I'd recommend the yellow tea they sold me that tasted like a snickerdoodle cookie- distinct sugar and cinnamon flavors, like nothing else I've brewed. It's the best naturally sweet tea I've ever had and it looks like I'll never have it again... nothing new for someone with a taste for good tea.

What's a new yerba mate brand to try out? So far Rosamonte is my favorite.

My wife bought it for my birthday, I've been using it every day since.
It's great, I'm very happy, with both quality and convenience.
The problem with leaves getting under the ball can occur, however this is a "skill" issue. Once you figure out how to use it, it won't happen to you.
One thing to note is that it takes up to 15 seconds for the top vessel to drain, so this should be taken into account, but again, once you figure it out, it's good.

That's disappointing to hear. I've only had two yellow teas and that sounds like it'd be wonderful since the other two I had were a nice melon-y tasting one from Nannuoshan that I kept fucking up with brewing except for one time and some organic Fancy YS brand (not bad at all but just whatever). I'll check out that Sweet Ya Bao next at some point, sounds interesting!

Dunni this producer. The dahongpao should be alright, these cheap wuyi style oolongs are usually drinkable. Cheap chink store puerh can sometimes be nasty, but I would still give it a chance

I've got some fresh matcha here, milled this summer. Been drinking some stuff from 2023 but I passed the rest of that can off to my brother's girlfriend when the new batches came in. I've got a June can of the Sonogi(still tastes like you scraped algae off a dock) open right now. The OG pu-erh boom was in China in the mid 2000s. That's when prices soared up and it became a luxury good
Later on, I guess some of that prestige rubbed off on the western market. The rise in cleaner production, fancy high end material and more accessible / ready to drink puerh also made it way more popular in the West

Chinese national standard protects the term 'puerh'. They list 75 counties, which are the only ones allowed to call their products puerh, all in Yunnan. When the mighty tea lord decides to swing the hammer the other counties better come up with a new term for that tea. I'd go for 'shmoo-eh'

This is the reason EU customs are fed up with chinaman greenery with fake invoices on the box. I always tell the seller to put the real invoice on the box so I don't look like an idiot in the customs offfice when they demand proof of payment at pickup. Tax here is only 7% on groceries so whatever.
Even Farmer Leaf now uses a local importer to forward the package here since packages barely make it through anymore how I learned the hard way. Still have an Awazon package coming, I have no hopes.

Pour 1l boiling water over the teabags (maybe start with 6?) + 100g sugar.
Take the tea bags out after 4 minutes and make sure the sugar is dissolved
Pour the tea over 500g ice cubes (shocking over ice makes the characteristic taste)
Add 35ml lemon juice

enjoy (getting the strengh right will take some experimentation)

Good ripe should be totally smooth, sweet, and have dried fruit notes. The fishiness and weird gross flavors ripe usually has is a defect, it's not supposed to be there. Shou gets much better after it's aged.

Yeah i hate being snobby about tea in general but matcha is something where you just shouldn't bother unless you get it from Japanese tea specialty stores. It's just a completely different product then the "matcha" sold in the west

I have no idea what to do with my jar full of Awazon ripes. In a gongfu session with flash steeps they are tolerable borderline undrinkable, but with longer brews the fishy stank gets concentrated and I gag after a single sip.

Whatever you do, use fresh mint. Steep your green tea with mint, at 80c for 5-15 minutes. For even more mint flavor, make a mint simple syrup, by adding fresh mint to the simple syrup while it is heating. Make sure to take the simple syrup to near boiling, the mint will appear to wilt, but you will get even more mint flavor.

Different pots will mute the flavor of your tea more or less depending on the type of clay, temperature they were fired at, etc. and the muting effect isn't necessarily desireable or a benefit. It can be, but you kind of just have to buy a pot and try brewing several different teas (preferably teas you are already familiar with) in it to see if you like the way it changes the tea.
I have one pot that doesn't seem to have much of an effect at all, and one that mutes so much that I use it only for super dank HK stored stuff because it sucked way too much flavor/aroma out of every other kind of tea I tried. I brewed some sheng in that yixing pot and in a cheap porcelain gaiwan side by side and the yixing actually made the sheng considerably worse.
Be wary of anybody telling you that you need [specific clay] for [specific type of tea], and be wary of what you hear from people trying to sell you something.
I would recommend that you only buy expensive teaware if you'd like to appreciate it as a work of functional art. Don't go into it thinking

because it really won't.
I'm happy with my yixing pots because I think they're cool. I enjoy using them and admiring them. They do have a muting effect on tea, but if I had purchased them expecting to get my money's worth by making my tea taste better, I'd be quite disappointed. If you want better tasting tea, just buy better tea. If you want to appreciate the history/artistry of teaware, then go ahead and buy expensive teaware (after doing research to make sure you aren't getting scammed).

For tea try bancha or hojicha. Hojicha is roasted tea stems and is quite low in caffeine with a pleasing toasty flavor. Bancha is made with larger older tea leaves and again is relatively low in caffeine and mellow tasting.

Tea hardware can be really cheap and can use cooking supplies you already have. I have my gunpowder green tea 4 liters at a time, in a 6 liter pot that I also use for pasta. The only extra hardware I need for that is my oversized mesh tea ball.

As long as you have something that can hold hot water for you, all you need is a mesh tea ball, and a thermometer if you want to be extra fancy.

It's pretty typical of scented/flavored teas to lose their potency after one steep. Since they are often cheap tea leaves with flavoring added, all the flavoring gets dissolved in the first steep, and the flavor of the tea leaves themselves isn't that strong.

my kettle is 1L and I overfill it a bit to account for the rinse so I'd say I drink around that 1L per day. Drinking FL 2023 Autumn Jingmai Gushu from free sample.

An understated and mild sheng, but with quite a nice mouthfeel (active with pretty thick body) and refreshing huigan. Seems to have a good calming effect on me too. Quite enjoying it so far, it's meditative and very easy to brew.

Tea doesn't really affect you like coffee does, if that was your previous source of caffeine. I'd recommend drinking real tea, and not and herbal tea or a blend. There is a reason drinking tea was common among monks, and cultivated around buddhist temples. Brewing tea is possible with no extra equipment if you have a mug, you don't need a stainless tea strainer, and I would actually suggest you not use one. The Finum brew basket is fine, it's largest enough to let the tea expand, but it isn't necessary. I own one and don't use it too often, it's also fairly expensive. The other piece of equipment I would recommend is a very simple glazed porcelain gaiwan, if you're ordering from china these can be had for 3-5 dollars.
Green tea is most commonly drunk granpa style, the name for just dumping tea and water in a vessel of some kind. I drink all sorts of tea this way, but it's the go to method for brewing chinese greens e.g. longjing. I'm mostly going to mention chinese tea since it can be had for much cheaper, usually, and is much higher quality on the low end. Japanese teas are excellent, and not too expensive, but have a higher starting minimum price. Hojicha is the Japanese tea that stands out, since it's soft and low in caffeine, that's what I would recommend trying. For Chinese green tea, green tea sold as longjing is a good bet, as are some cheaper oolongs. If you want to try a puerh-like tea, huangpian is a good bet, it is generally softer and milder than sheng puerh from a similar season and area. Fu-cha is another tea than can be had extremely cheaply, in bricks, and is easy to brew.
You're kind of in an unfortunate spot, if you're starting out I recommend buying samples of lots of teas and trying them. There are hundreds of different kinds of teas out there, so drinking tea is really an explore / exploit problem for the first few years of drinking it.

Actually, I recently ordered kind of a lot of new tea to try, very little of which is any good, and I kind of regret not just buying a lot of tea that I knew I would like. Hello anons. I prepared about 140g of mandarin skins (from 20 mandarins) for making chenpi today.

Last time I did this, I attempted to do it with lemon peels in early 2022. I haven't had them even once since, but I smell them every few months, and they do smell quite nice each time. However, I learned a lot from my first time trying it. So, I thought I'd share some observations like I did back then.

First and foremost: any kind of extra moisture (juice from the citrus, sink water, etc) and excess pith can be risk factors for mold. Especially so if they clump together. I was able to salvage enough from that first run, but it was a measly 72g of what could have been much more. This time, I am at 140g of citrus peel, taking care to not puncture into the juicy layer, and removing any particularly concentrated concentrations of pith. I also spread the haul over two plates to increase airflow. This should prevent it from even feasibly holding onto water, and furthermore, improve how quickly it will dry (thinner surface against open air) while preventing mold. I'll have to wait a few days to see how it turns out.

My technique for peeling developed as I tried new things. I don't think it's worth scraping at pith from a time perspective, even if it could theoretically improve the final product, but I did that for maybe 1/3 of them. I think they look better if you peel carefully into a flower/windmill shape, which I did later on. Anyway, it's all trial and error, but if any of you want to do it at home, try not to be too much of a perfectionist with it.

Air drying. I checked them around an hour or two ago to see how the drying has gone and mix up the piles. Seems to be progressing nicely already. I'll wait some three days or so to observe for any chance of mold (which should hopefully be low) before I package it all in a bag and store it for aging. As for what I'd have them with...tough choice. I think it could go well with cheap whites and shou. It needs time to age regardless, but my lemon chenpi could be consumed now if I wished.

do you have any aged white teas you would recommend?
I've tried a Taiwanese aged white made from a T-18 cultivar (one of the cultivars developed by their ministry of agriculture and normally used to make black tea) and I've liked it very much, but the website I got it from isn't selling it anymore.
It looked quite similar to black tea, dark, withered and small, and had a similar taste to yue guang bai but was certainly a higher quality tea, it had like a buttery, somewhat sweet smell of a mid-high oxidized oolong and flowers like peony, with very little of the astringency of more aged and tannic tea and little of the grassy-ness of tea made with more buds than leaves.
I'm looking for something similar to that, so I'd appreciate any recommendation.

It's been about a year since I went to Taiwan, and one of the teas I bought there was Muzha Tie Guan Yin. I first tried it a month or two after getting home, and it tasted like pure charcoal, nothing like the well balanced tea I sampled in the shop. I knew heavily roasted tea took a while after roasting to be drinkable, so I waited and tried it again six months after I bought it and still it was nothing but roast flavor. I was just about ready to accept that I had gotten screwed over and sold crap since I was a tourist after that.
But today I tried it and was pleasantly surprised to find that the tea had balanced out. Caramelized sweetness, that sort of straw/hay TGY note, and the nice heavy roast to balance it out. Good stuff, it makes the new age super light roast Anxi TGY seem like it's missing something (I guess because it is).
I had thought that six months was plenty of time for the roast to calm down, but apparently not.
I told myself that I wasn't going to buy any more tea this year, but I've been on a yancha kick lately and I really want to go deeper into the realm of roasted oolongs...

I flew across the us and after waking up on the plane, my head was fucking killing me. It felt like there was a drill in my skull so my brother got me some green tea since its supposed to relieve pressure headaches. No. I just finished a can milled may 2023 and popped a fresh one milled in june. Visually the older one was a tinge darker but they're not far off in taste.

I've got a top tier electric frother/milk kettle(dreo baristamaker) and a takayama whisk/scoop+tsubame sieve. That little extra bit of effort keeps me from drinking the stash too quickly. If you're buying to enjoy, then enjoy it. If you're buying to consume, then consume it. If I don't have time to make and enjoy matcha, I don't make matcha.

I've tried several, not a lot but I've enjoyed all of them. I actually bought one in Taiwan as well, I've posted about it here before.
In my limited experience they converge on a really nice mellow sweetness kind of like figs, and they do also pick up a note that is recognizable as "aged", something like dry wood and old books.
They're definitely worth a try.

Found the two puerh I tried were too astringent and green tea too weak in flavor.
I was looking for the tea taste that I would get at dim sum places and he said those were usually a mix of puerh and chrysanthemum and brewed me a cup. Exactly what I was looking for.

It's been around three days since I prepared a batch of fresh chenpi: >>20932499 .Thought I'd share an update to show some of you what it looks like (pic related), and perhaps encourage other anons to give it a go. Nearing three full days later, a few things of note have been observed:

I believe this supports my claim about avoiding careless hydration/humidity and excessively thick pith portions.

I found it surprising that it shrunk in weight mass by over 2x, but it did dry and stiffen considerably in a short time.

It's not too hard to do. The aroma seems decent, but it's clearly still young and needs time to age and develop its aromas. One challenge with this is that while I wanted to use a citrus skin peeler, the skin was too thin to do so so finely. I think there may be potential with citrus fruits that have very thick skins, and peeling just outside of the pith for the ultra-concentrated portions of oils and thin remainders thereof that should dry and age most rapidly.

I have seen videos where they do that. I don't personally have the tools for it in the method I've seen of them prepping it like a jack-o-lantern, but I do have an idea. That is, cutting out windmill shapes, shaping them upward, filling with tea, and either tying them up temporarily with twine or thin skewers to dry into their new shape. I think this could even be superior in a way, since it'd naturally unfurl both the skin and the tea for consistent infusion. My only concern is if it'd increase the risk of mold development or not.

Try out different teas and see which one is most suited to your tastes and start there, something like black tea might be easier. i started with a vahdam variety pack then moved into chinese. my advice would be buy something like that and a £10 gaiwan or mug brew basket, brew western style i.e 2g for 3-5 mins in a 100ml gaiwan or mug and if you like that start looking into brewing gongfu style with chinese teas.

dont go the whole hog and buy an expensive gonfu set or a kilo of random chinese teas, start simple and build.

just dont bother with teabags, its cheap worthless dust grade in plastic that needs milk and sugar to make it drinkable

Pretty sure they are neglible. Having a cup of green tea everyday is propably better than having the same amount of coffee or beer. When you pump liters of tea and getting caffeine rush from it, the health benefits will be out of the window.
Tea is big in esoteric circles. There is a whole industry behind shilling this lifestyle so take everything with a grain of salt from that direction.
Make sure to not drink your tea or whatever liquid too hot, the heat fucks up your throat cells and will be carcinogenic.

Brew it western style, ratios can be found in the OP rentry. You can buy a mesh strainer basket if you want to but steeping in one mug and just pouring the tea into another mug will also work. If you find it too astringent try decreasing the time you steep. The two mug method can also be used to try gong fu brewing but if you do get the Alwazah I recommend against that- it comes out extremely bitter.
Alternatively, you could try a shou mei white tea, they lack the bitter/grassy flavors people just getting into tea find unpleasant. They also do well with both western and gong fu style brewing.

And yeah, adding 25% Chinese black tea, damn, the tea is heavenly. You can drink it hot but I also like to have another cup at room temperature and let the flavors meld while cooling down and the taste on my tongue is awesome. The taste on the tongue is awesome. Really good.
Try it with pu-erh too.
5 grams in 450ml boiling pot of water. Boil 10 mins, then take off heat and steep 2 mins. then,
Most important thing for milk tea is FILTERING it with a fine filter at least 4 times.
Add milk to cup of filtered tea. SMOOTH and tasty.
