I've had pretty much nothing but hot dogs and chili the past 2 days. I feel shockingly fine, although my sodium is probably a little high. Also mashed potatoes with chili is severely underrated. It's like a tex-mex shepherds pie.

What I've found to be successful is using smaller potatoes, a decent amount of oil, parchment paper, and convection baking instead of regular to get the moisture away.

If you wanna go try hard you can par boil the potatoes in a baking soda solution. Something about the basic solution roughs up the potato flesh.

NW Pennsylvania Greek sauce, it's ground beef, fine chopped onion, 1tsp/lb of garlic powder, oregano, basil, cumin, crushed red pepper, salt, pepper, 4-8 oz tomato sauce, cup of chicken stock, throw it in a crock pot, mix the fuck outta it, slow cook for 7-8 hrs on high. good on dogs, fries, & burgers. good in the fridge for 5 days, freeze up to 2 mo.

folks in that region will tell you it isn't chili, but I don't see why it can't be considered such. the best restaurant serving it is Red Hot in Erie, PA, haven't been there in a few years but I always buy 5-6 qts when I visit, been trying to replicate their recipe for years.

I made Chicken Yassa the other night. Growing up we had a family friend from Gambia and she'd make this. I've tried to recreate it several times and this is the closest I've gotten it so far. Still needs more lemon though, I marinated the chicken in the juice of three and threw another one sliced in the pot to boil with the stew. Use small yukon gold potatoes and cut the into bite size pieces. Put them in decent sized bowl and toss in some olive oil and toss to cover them in it. Then add your kosher salt, cracked pepper, garlic powder, onion powder, thyme, rosemary, a couple dashes of smoked paprika and toss it all again to distribute thoroughly. The just throw them in an air fryer at 350f for about 15 minutes, tossing them one time mid way through cooking. Very easy, very fast and always perfect. If you want to go one step further sprinkle some real Parmesan cheese on top of them when there’s just a few minutes left to cook and it will crisp up perfectly over the potatoes.

I use the chef steps recipe for canele, of all the various versions I've tried I have the most luck with that one.
The only change I make is that I grease the molds with a 50/50 clarified butter and beeswax mixture.

Interesting. Looks very similar to Rochester NY hot sauce that is served on garbage plates. Rochester also has red/white hots made by Zweigle's. Good stuff.

im not talking shit, it's just you can use just about any cut, the difference come from how you have to cook the different cuts to make them edible.
i use skirt steak, short rib would be better but lets be real here.
