Omuriceanon here.Still trying, still learning.I discovered the reason why my omelette stuck a little to the pan despite the variable amount of oil used each time, basically when the “hard” bottom layer was forming I kept scrambling it while at the same time also the mixture at the top curdled so I wasn’t allowing the bottom of the omelette to reach the correct temperature to detach itself from the pan perfectly.I’m working on finding the solution which as always is finding the correct amount of heat on the stove, however if I avoid scrambling the outer layers, the egg which sticks to the outer sides of the pan the first time you quickly stir, they will become hard and release immediately without browning and while staying soft and thin.As always, you need to work quickly because this happens because I have the pan hot.It’s a long long game, but it’s worth playing if.

No idea whats an upper limit to how long they can be kept this way tho. How long do washed shelled raw eggs keep for outside the fridge?I think I tried pickling once in the past, but recipe was unclear and I fucked something up, it went bad and it was awful.

I love eggs but I chug them down eagerly in 4-5 spoonfuls and I never feel satisfied, it's not good famiglia.I always make 2 eggs for breakfast but I started adding 110 ml of egg whites, so the volume of another 2 eggs, to fill me even more but the problem is that egg whites fucking sucks because they're tasteless so I cook them separately into a frittata and smear it with whatever sauce I have on hand. Lately I've been using chickpeas hummus and it's good.
