I like to crack an egg right into the pot once the noodles soften a little to form a nest, but don't stir it up. Basically poach the whole egg while the noodles cook, then I chop it into pieces with my fork.

Other mix ins I do a lot is frozen vegetables, frozen fish balls, leftover meat like cooked chicken, pork chops, or stew beef. I also have tried frozen spinach, chopped up baby bok choy, mushrooms, meatballs, and processed cheese slice. It's all good.

Most times I just do frozen peas, the poached egg, some cracked black pepper and some gochugaru or togarashi. That's my perfect meal for when it's 2am and never ate dinner and I just want to put something in my stomach so I can fall asleep

If it all has to be one pan:

Simmer the broth with ginger, galangal and/or star anis. Remove before serving. Try some rice vinegar, mirin, oyster sauce, fish sauce, miso and/or hoysin sauce as seasoning.
Add grated carrot, green onion, bell pepper, bok choi at the last minute.
You could boil some goyoza in the broth, though it won't be as good as steaming. Or maybe some fish balls.

Get a carver ham from Sam's club or Costco and slice off big chunks of it. Just got one today for 2.99 or you wait until Thanksgiving and Xristmas and get a whole spiral sliced ham for 99c a pound and separate it out and use that.
