I would argue that the methodology of the two breads is no longer comparable. One is the result of an intense process of refinement where every ingredient has been manually separated into the lowest level components and reintroduced in an exact configuration to meet specific measurable objectives of shelf life, texture, appearance, and flavor. The other is an exercise in simplicity where the grain is simply ground and sifted, then the leavening is a naturally occurring combination of yeast and bacteria that accompany the grain. The results and methods couldn’t be more different and I don’t think they should be compared. You would only use one for the other if you were misinformed.

It's not butter, milk, or salt, what could it be? Maybe something that could be described as "mystery soap".
Suppliers show picrel, so maybe it's actually this, or a mixture of sodium (oligo)steraoyl lactates.
Sodium steraoyl lactacte is the sodium salt of lactic acid esterified (not mixed) with stearic acid.
It is better described as something similar to a soap with some weak chelating properties, and atleast with the oligolactates it would still have some activity as a nonionic surfactant when it gets protonated.
These will be broken up by your esterases but its not the same as lactic acid, fat and what is it supposed to be, sodium? salt? lye?..., just like salt isnt lye and soap and soap, scum or FAME/FAEE biouel arent the same as fat.
Does does monolactylate get taken up into bloodstream and how long would it be arounds before getting rekt by enzymes? I dont know.

There is an interesting relationship with substance that organisms adapt to and kill eachother with, that has to do with why even substances like allicin keep being made and killing certain organism the same the same, while garlic can still get moldy and they dont seem to "settle" instead of "chasing" each other with new mutations, but lets not get into that

i am not fat but i love pastas, breads, carbs. i know i have to limit them, but i still love them. crusty homemade loaves are great, but nothing beats a $1.99 pack of hamburger or hotdog buns. i dont want a heavy nature fiber superbread, i want a light piece of 'food' to support the real ingredients im holding with it. i LOVE that i can keep these in the pantry for over a month and they're still fine to eat
