Most recently used tofu in a soup. Pickled mustard greens soup cooked with chicken stock and ginger etc then tofu added at the end and topped with sauteed marinated pork belly at end.

Tofu nuggers:
Marinate - I usually go for a bit of light and dark soy, vinegar, sugar, salt, miso, and scallion or garlic.
Slice or cube
Dredge in cornstarch
Fry til crispy. Serve with some kind of sauce.

Mapo Tofu:
- 2 tbsps oil of choice (peanut oil or lard are the right choices)
- 4 fresh chilies, finely sliced
- 4 dried chilies, crushed
- 1 tbsp sichuan peppercorn, crushed or coarsely ground
- 1 small / 1/2 large fist of garlic, crushed
- about a 1.5" cube of ginger, grated
- 1/2 lb ground/chopped lean pork
- 1lb tofu (silken and firm are both good)
- 2 tbsps spicy bean paste
- 2 tsps cornstarch
- 1/2 tsp sesame oil
- 1 cup broth (pork ideally, chicken otherwise)
- 1 tsp sugar
- 1 tbsp (rice) vinegar
- 1 scallion sliced

You can also make Mapo Tofu with ground beef, chicken, or even make it vegan with shittake mushrooms.

Try it with rice, fried shallots and hot chilli oil. One of the best tofu recipes ever!

Pork is the OG. But there are many Buddhists in the Sichuan region, so vegetarian is also authentic. I've enjoyed it many times with Wood Ear Fungus too.
(Pork AND fungus mapo tofu would probably be the best of all combination).
With extra sichuan pepper for mala sensation.

No. It makes it more porous and, paradoxically, fibrous-y and gives it a much more meat-like texture. The trick Anon is using is usually done with medium firm tofu but you freeze and thaw twice then squeeze out as much excess liquid as possible. Now, you soak it in vegan chicken stock and you can much more easily approximate the taste and texture of a piece of fried chicken. It's a well-known technique. I'm not even vegan (just had a huge plate of fish and chips for dinner with the family and was then hit a sudden pang for steak after for some reason; I don't even like steak) and I know it.

Mapo tofu is pretty fucking based. Even meatless, it's great stuff and a good introduction to tofu in general and Szechuan cooking.

It's even better if you can make your own chili oil for it.

I buy it in kilo cubes and at home use it mostly for hot pot and curry dishes.

The same pattern happens all over the world. In east asia, the people who've been eating rice and soy for 1000s of years are all small and weak, whereas the people who've been eating meat and strong and masculine.

In central asia, the meat eating nomads (like the kazakh nomads) and literally 2 heads taller than the central asian people who've been eating an agricultural diet for 1000s of years.

In europe, the south europeans who've practiced agriculture for 1000s of years and much smaller and less masculine than the nordic and germanic meat eating chads are.

My mum makes tofu egg rolls that are pretty good imo. Basically asian salad mix, tofu seasoned with chinese 5 spice, maybe some onion and fried egg in the same pan. Fill egg roll wrappers with the mix and fry in cheap olive oil.
