The way it's processed makes it taste very, very similar to ham, moreso than it does to either country bacon or "regular" bacon. >>20972748Do you cure your own bacon? I find an immersion cure to work best because with time you're guaranteed to get the ppm nitrates right as long as you can do basic math. Less salty, about 1.1% salt by volume brings out the flavor of the pork just right. It's easier to season an immersion cure, I prefer to boil pepper corns for 15 minutes and add rosemary and thyme right as I turn off the heat. I find myosin still coming out of the meat when I cook it so I'm not taking much, if any, nutrition out with the immersion. Also, the bacon in your pic looks under-smoked and applewood is best for pork anyway.
