Bacon is being ruined. unless you order from the internet something like pic related, you aren't getting real bacon.

bacon is being made now for the lowest common denominator. it's bland, unsmoked, and with almost no salt in it.

when I was a kid, ALL bacon was like pic related. actually smoked, salted to hell, and dry cured. it was awesome. if you hate bacon or think it is overrated this is why.

tastelets complained and morons who believe salt is bad for you have ruined bacon. it's no longer smoked, it's not even injected with smoke flavor (no matter what the package says).

Other than >>20972783, I just remembered another brand but this one is also different. It's Lowell. The way it's processed makes it taste very, very similar to ham, moreso than it does to either country bacon or "regular" bacon. I've seen the Poles at that butcher shop just slice some to put in sandwiches and eat as-is without further cooking so I would guess that this is why it tastes more like ham. It's pretty good, but not bacon in any sense to me. Just very fatty, super delicious ham.

True. Most smoked bacon is only lightly smoked. To be honest, I find well-smoked bacon too strong to eat on it's own but it's very good for cooking. The same place that sells the one I described in >>20972821 also sells a bacon that's literally black with smoke, processed with a heavy amount of juniper berries similar to jałowcowa, a Polish juniper sausage. I use it in bigos, a type of "stew" of sauerkraut and cured meats and stuff.

Hempler's from Washington and Hill's from Oregon. Hempler's does a nice shoulder bacon and Hill's has a super thick cut bacon that's nice for recipes. You can get good sized cubes of meat that hold up during cooking, it's almost as good as buying and cutting it yourself from a whole slab

Do you cure your own bacon? I find an immersion cure to work best because with time you're guaranteed to get the ppm nitrates right as long as you can do basic math. Less salty, about 1.1% salt by volume brings out the flavor of the pork just right. It's easier to season an immersion cure, I prefer to boil pepper corns for 15 minutes and add rosemary and thyme right as I turn off the heat. I find myosin still coming out of the meat when I cook it so I'm not taking much, if any, nutrition out with the immersion. Also, the bacon in your pic looks under-smoked and applewood is best for pork anyway. I'm sure it's still good though.

Make your own bacon, its easy. Dry or wet cure, you can do it with as little equipment as a container, grill, and knife. I regularly make pounds of it at a time with cubeb and long pepper, sugar, salt, and sometimes cayenne.

Mostly I've noticed bacon has less fat/the fat doesn't render as well these days. Used to be a portion of bacon could give me cooking fat for days, now it's barely got enough to cook itself and never comes out as crispy.
