How do you make liver taste good?
I have some chicken liver but it tastes awful.

I'm a bong, I came to this thread because I saw the Pigs liver but You want advice on chicken livers. I am better with Pigs/Cows/Lambs liver so I can't really help.

Ignore American advice, they are clueless when it comes to cooking, I would instead look towards Spanish recipes for chicken liver (I have never looked but I'm sure Latin America has good ideas too).

This is the best recipe I’ve found so far:

This is similar to the Philippines style sweet spaghetti sauces that use liver. It's actually really good, and blending liver up into sauces is a great technique

Further suggestions, if you want to eat it plain-ish..
Find the most tender part of the organ with the least/no arterial tubes running through if and slice thin pieces. If you're concerned about how dirty it is, boil it a few minutes first.
Then, sear them quickly in a pan with butter, take them out, and eat them with your condiments of choice while pretending they are fried worms
Congratulations, you learned liver sucks but is tolerable and satisfied a lifetime urge

I soak my chicken livers in a mixture of milk with a few splashes of Worcestershire sauce before I cook them and it has nothing to do with “cleansing” the meat. That honestly has never even crossed my mind. I do it entirely for texture/flavor purposes and yes it does actually make a pretty noticeable difference, I’ve cooked up plenty of livers in the past side by side both with and without to make sure I wasn’t taking an extra, unnecessary step but it’s worth doing.

I make bullshit pate out of them. Caramelise a metric fucktonne of onion in butter with white wine, add livers and cook then, when they're just about done, but it with cream and bring to a simmer. Off the heat, process smooth and s&p2t. Stir in some sweet parsley and allow to cool then chill and serve cold with toast points or crackers.

If you don't like the typical "liver taste" of liver to begin with then basically nothing will make it taste good to you. Other than that, soak it in milk for a couple of hours before actually preparing it in whatever way you were going to.

To all the anons here saying chicken liver is bad, you’re doing it wrong. My method is to soak in milk/half & half with a few splashes of Worcestershire as mentioned earlier, not to “cleanse” it or some retarded shit but to enrich the flavor and texture. Then I roll them in flour, dip them in an egg wash and coat them in bread crumbs mixed with garlic powder, onion powder, black pepper, paprika, and a dash of basil. Deep fry in a pan or pot of shallow oil at medium high heat but make sure it’s not enough that they’re at any point actually submerged (probably a good idea to use a screen or a lid because they can be a bit crackly). Flip them around and keep on eye on them until they’re nice and browned and crispy and enjoy with A1 or whatever is to your liking, they’re like soft, richly flavored nuggets. I don’t even really like liver and onions as a dish but when you fry them like that it’s a whole different experience entirely, I’ve turned several friends who thought they hated livers towards the light with that method. It really is all how you prepare it and unfortunately it is very easy to overcook them and make them rubbery so it’s something you have to get the hang of but it’s like riding a bike once you have the method down.

Just made some chicken liver for the first time yesterday, it turned out delicious, here's what I did
marinate in milk for 24h
roll in flour, sprinkle salt and fresh ground pepper
caramelize onions in butter on high heat
once onions start to tan, toss in floured liver, do not touch pan for 3 mins
flip and do not touch pan for another 3 mins
remove from heat and serve immediately
voila nigger, you're welcome

Adding pepper, white pepper and salt to taste. Sometimes I fry the onions and mushrooms with some smoked paprika powder too.

Always delicious. Don't know about quality but I always gotten my chicken liver from a poultry shop, never bothered with soaking it in milk or shit like that, never heard of it either.

i think the difference between pastured vs grain-fed is more noticeable with meat. but i still can taste a difference with milk and eggs. better quality ones have less off flavors.

This.Also,eat liver slowly,don't take huge bites,i found out that's important in order to enjoy it properly,it's not like a steak or something that you can wolf down rapidly,liver has that unique and strong taste and i like taking smaller bites and eating it slower than other meats.But yes,it's best used in a sauce,it's not that great by itself.
