Is there really any point to mild cheddar?

My experience with cheddar cheese has always been: the sharper, the better.
That sharp cheddar isn't even necessarily more expensive makes mild cheddar seem like the most useless cheese.

Mild works better as an ingredient in a larger dish. As a topping for chili, for example, you want some cheese taste and texture in the background without overpowering the chili itself.

I can understand you enjoying milder cheeses in some circumstances, but is that mild cheese really going to be cheddar then? Mild cheddar has too stiff of competition, whereas sharp cheddar, to me, is the primary purpose of cheddar as a cheese. If it's not sharp, it's nothing. There's a billion other cheeses to choose from then.

ngl, I fucks with the cheap shit occasionally myself but real cheddar absolutely costs more the longer it's aged/the sharper it is. If it's dyed unnaturally orange or it's some unnaturally white shade, it's not real cheddar. Properly, the stuff is the same vague yellow as parmigiano, gouda and other real cheeses

has anyone else noticed the rapid degradation of cheddar cheese in the USA? It seems like every single brand of brick cheddar has become extremely soft and lacking in the signature cheddar flavor that they use to have. I'm running out of options when it comes to cheddar because I need a lot of it. It's basically a staple of my diet.
Whenever I go shopping I squeeze the brick a little to see how soft it is. This shit is genuinely american cheese levels of soft. It's getting bad, and it tastes like shit. Even worse, it doesn't melt properly and becomes grainy really fast, and clumps up after melting.
It's basically inedible. idk how I'm the only person who's noticed this. I talk to people IRL and it's like the cheese has never changed.

what the fuck is going on with cheddar cheese in america? Are they just not aging it for as long anymore? Are they using different, cheaper ingredients to make it? What the fuck is happening?

I've noticed, yeah. Where I live I use to buy Lucerne cheddar cheese from the store. It had a good flavor and was nice and firm. Now the same block of cheese is really soft and mushy, and tastes more like cheddar "flavored" cheese.
Pretty sure it's just inflation, but the cheese manufacturers don't want to raise prices and piss people off, so they drop the quality, probably ship their cheese out faster so it loses out on aging, resulting in a softer cheese that has a less developed flavor profile.

Mild is better if you are making authentic crab cakes. Sharp will easily overpower the delicate lump crab taste.

I thought that too but only decided to test out the theory recently. I bought this brand and it was slightly too sharp to enjoy eating by itself. It's still good paired with something else, but I won't be buying it again.

Sounds like they fucked up making it, maybe they switched from one coagulant (usually synthetic rennet) to a cheaper, worse one, maybe they've been skipping steps in the production process to reduce time/energy required etc.
