I used a simple Japanese milk bread recipe. I used a little bit of my own method with the wet ingredients to increase air and overall fluffiness in the recipe. The top was given an egg wash, of course, and then after baking was glazed with a simple syrup made of equal parts sugar and water, and a dash of vanilla extract, almond extract, and rose tincture.
I would appreciate your input. What kind of techniques have developed when making bread that is unique to you?

As far as I know (I almost only ever use active dry yeast so I could be wrong), it depends on what type of yeast you use. Iirc you don't need to activate instant or fresh yeast before mixing

i bought a bag of amylase for making drinks, but that gave me the idea of making a dough that has added gelatinized starch and amylase in order to feed the yeast without adding any sugar to it. i am currently in the poolish stage, so tomorrow i will see if it was a good or bad idea

Hell yeah bread bros. Ive been picking ny moms brain more and more these years for her recipes and got a really good one for squash rolls I like to make for the holidays. They are sweet and delish dont even need to add anything to it besides a dab of butter. Or if you are feeling adventerous a bit of honey or home made jam. Takes a while though. But cant let those good ol family recipes die, and Ima teach my daughter when shes a bit older
