What's the point of its existence? Why would you want to add it into your dish? It's not like it was outright bad, but I tred to add it to different vegetable mixes, fry it with rice, put it into soup (roasted with onions) and the likes, but in any of those cases I couldn't help but think "what value does celery brings here?" The taste is meh, the look is meh, everything I cook with it would stay pretty much the same without it. Why should I bother with it at all?

get some celery salt and taste it, you will realize what it adds to a dish. celery has a very distinct MSG-like taste due to glutamates, it's a very unique vegetable and if you can't notice it's absence in a dish, I genuinely don't know what to tell you other than work on developing your palette. I understand if you don't like it, but you should be able to taste it.

and btw the reason I say try celery salt is it's like the glutamate taste of celery refined and concentrated. celery is mostly water like somebody else said, so it can be subtler. in fact, I often just put celery salt in dishes instead of celery. but celery does provide a subtle foundational note, try the salt and you'll see what I'm talking about

It is a flavour adder. Make a soup. Now make it with chopped celery added. Now make it with too much celery (like 5-6x the recommended amt). In the last sample, the celery is almost overwhelming.

I love it, I add it to a lot of things. It functions a lot like carrot and onion, it's a tough root vegetable that can withstand a lot of punishment.
One tip I'd give if you plan to eat it raw or just slightly cooked is to cut it very finely horizontally, because the stringiness that holds it together runs vertically along the stalk. It can be annoying hard to chew if you don't cut against that grain.
