Am I retarded or will this come out ok>making a pork shoulder for thanksgiving >idc I hate turkey>going to slow roast it for about 8h the night before>then do the whole blast it in a 500F oven to sear/crisp it up technique I’ve done it this way before and it always comes out amazing, but never with an overnight rest/refrigeration in between. Will it come out shit? I figure I just gotta warm it up again to like 140 internal in like a 350 oven, before crankin the heat to sear it. It’s not a prime rib so it doesn’t have to be perfectly rare or anything obviously. All the collagen will remain broken down from the slow cook the night before, so it should still be nice and tender. I think I’m just worried about doing it a different way for the first time. Should come out ok, right?
>>20978786Sure
>>20978786I find reheated meat to have some off flavors. If that's not something you've ever noticed then it should be just fine.
>>20978822Even just normal leftovers? I’ve made it the normal way plenty of and never noticed a funny taste eating it the next day, even cold. I’ll be making a jus or maybe a port wine sauce to pair with it so I don’t think that’ll be an issue for my friends and family, who aren’t picky.
>>20978786You could try it, I personally don’t see a big flaw in the process, but I always get nervous trying new recipes or methods the day of an important event. Why risk it and not try the methods you have already done before?
>>20978786You're better off just starting the slow roast at 10am, man.
>>20978833Yeah I've noticed it with normal leftovers. Some people I know also notice it, but some don't, or they don't mind it at least.
>>20978786Reheating it just seems like unnecessary work.
>>20978911Because I’m not hosting but I am cooking. So I can’t just use the oven for 8 hours, other people will need it. >>20978951I agree but see above, I guess I could go to their house at like 7am and get it done by about 3AM, but that’s less preferable than just cooking the night before. >>20978964I can’t just put a fridge cold roast into a 500 oven to sear it, it’ll be cold in the middle.
>>20978986I'm just saying, refrigerating it and then having to reheat and sear it later is extra work. Start it in the morning and sear it in the evening.
>>20978986>>20978997I didn't read your whole post. Maybe you should have picked something other that doesn't take 8 hours if you're not hosting. In all honesty, I bet it'll be fine. Just don't let it dry out!
>>20979000Yea you’re prob right. I mentioned it to my bro in law (is my wife’s, sister’s, husband a bro in law?) and he liked the idea though. I think it’ll be ok. I did prime rib last year and it came out so good, but it was a 9 bone roast and it also took all day lmao, about six hours to cook and then sear.
Imagine her cheesy BRRRRRPS
>>20979170>dream with me anon
>>20978986>>20978786why does she have dead eyes
>>20979248She’s Italian, please understand. (She’s just jamming it up for the camera).
>>20979288Hamming*
>>20979031Cook it at home, then let it rest while you drive to the party. As long as it’s not like 2+ hours away It will still be more than hot enough to be safe—just be sure to blot it dry before it goes in. You’ll never be able to heat the center at 500F if you bring it cold.
>>20980058Likes like a 25 minute drive. I think I’m gonna wake up early and cook it before we leave, from like 4am - 11am, then finish it at their place. This way I won’t have to refrigerate it at all.
Anon, we don’t use the word “retarded” in the current year, as it’s offensive to retards.
>>20978822imo reheated slow cooked meats taste even better
>>20978786>going to slow roast it for about 8h the night beforeit will be mush in the morning, dry mush>then do the whole blast it in a 500F oven to sear/crisp it up techniquenow it's burnt dry mush
>>20980478Nah it won’t be though
>>20978786Slow roasting for 8h might leave it overcooked. Better to do it during waking hours, check on it every 30 minutes after 3 hours. Reheating with the broiler works just fine, though I haven't done something like that at 500F instead.
>>20980632yes it will be.
>nono
>>20978786women hit the wall.
>>20978786Dude, baste.
