I’ve done it this way before and it always comes out amazing, but never with an overnight rest/refrigeration in between. Will it come out shit? I figure I just gotta warm it up again to like 140 internal in like a 350 oven, before crankin the heat to sear it. It’s not a prime rib so it doesn’t have to be perfectly rare or anything obviously. All the collagen will remain broken down from the slow cook the night before, so it should still be nice and tender. I think I’m just worried about doing it a different way for the first time. Should come out ok, right?

Even just normal leftovers? I’ve made it the normal way plenty of and never noticed a funny taste eating it the next day, even cold. I’ll be making a jus or maybe a port wine sauce to pair with it so I don’t think that’ll be an issue for my friends and family, who aren’t picky.

You could try it, I personally don’t see a big flaw in the process, but I always get nervous trying new recipes or methods the day of an important event. Why risk it and not try the methods you have already done before?

Yea you’re prob right. I mentioned it to my bro in law (is my wife’s, sister’s, husband a bro in law?) and he liked the idea though. I think it’ll be ok. I did prime rib last year and it came out so good, but it was a 9 bone roast and it also took all day lmao, about six hours to cook and then sear.

Cook it at home, then let it rest while you drive to the party. As long as it’s not like 2+ hours away It will still be more than hot enough to be safe—just be sure to blot it dry before it goes in. You’ll never be able to heat the center at 500F if you bring it cold.

Likes like a 25 minute drive. I think I’m gonna wake up early and cook it before we leave, from like 4am - 11am, then finish it at their place. This way I won’t have to refrigerate it at all.

Slow roasting for 8h might leave it overcooked. Better to do it during waking hours, check on it every 30 minutes after 3 hours. Reheating with the broiler works just fine, though I haven't done something like that at 500F instead.
