>>20979598Thanks anon.It was boiled turkey breast with steamed carrots and fennel on a fava beans purée bed.It’s just an irl shitpost to play with “boring” food, and personally I liked the taste of that dish despite the look.The pasta is my signature legume pasta (it’s red lentils this time) cooked in bone stock and sautéed in the ossobuco marrow, the fat and the starch is then emulsified with nutritional yeast. Sometimes I add caramelised onions too.

>>20979754It could be done...smaller plate, a good dollop of puree with a smear. Mashed carrot off to one side (maybe not mashed). Fennel cooked a lot less - left green for a shock of colour and texture, and some of the turkey skin crisped. 30/60 degree angles, especailly when applicable to gain height... Boiled turkey breast...No mushy peas? Homie's right, this should have been a soup.
