Alright lads here's the rundown. My sister is a celiac (endoscopy and everything not a basket case) and I want to include her in Thanksgiving. >>20979455My wife is also a diagnosed celiac and this is the brand we use. In general, the recipes turn out fine but it is noticeable that the product is gluten free. It doesn't bind as well so some things turn out crumbly. You may have issues using it for a pie crust. Our Thanksgiving plan is to buy a premade GF pie crust from Wegmans (I wish I could tell you the brand) and go from there. You should be fine making chocolate chip cookies with it. I also use it for my gravy and it's not noticeable. My wife doesn't bother with GF recipes; she takes whatever recipe she wants from eg our Better Homes cookbook and substitutes the flour.Also, the premade GF baking mixes from King Arthur, Krusteaz, etc, are actually pretty good. >>20979455Gluten is import for stiffer, springy foods like bread, pasta, or pizza. In cakes, pie crusts, and cookies you want them to remain soft and crumbly. You generally avoid gluten formation by not over-kneading, so in the same regard low gluten flour should work fine there.

So people in my family have real allergies and I've fucked around with trying to find the best of the gluten free flour blends and what to do with them.Shortbread works. And things like lemon bars or other recipes built around shortbread work.

Trader Joe's does a gluten free pie crust that's pretty good. Otherwise, home-made gluten free dough is always subpar, and while it's a nice effort, a lot of the time you should just buy the things she craves rather than try to make them.

"Wasting" test bakes implies the test bakes are not going to be edible. Texturally is one thing but it's pretty rare to have an absolutely disgusting inedible GF pie shell or cookie unless you absolutely fuck up the ratios or have no common sense.Pie crust hardly matters anyways, they're gonna taste the filling and obese amounts of whipped cream more than the bland shitty crust anyways. I've used this exact flour, it works best in oatmeal chocolate chip cookies, just have to get gluten-free oatsone note: it doesn't incorporate quite as readily as regular flour, mix your dry with your wet a bit longer until there's no longer an obvious grittiness

>>20979455They have recipes on their website for using their GF flour. As other anons have said, do a test run using their professional test kitchen recipes. That brand is on the cheaper end of GF 1-1 flour and can be found pretty much everywhere. Don’t worry about wasting it.
