the one where I currently work is genuinely the nicest workplace I ever had
but it's a small hotel restaurant in a mid sized city (with "only" one michelin star)
we don't have much pressure - except the occasional pride of our Chef de cuisine

also most guest are (really) old people that just want to get wasted on good wine
probably also the most frustrating thing, because you see their blank, indifferent star whenever the food comes but they light up as soon as they get the next wine
funnily enough, all the 20s/30s looking guests usually take an alcohol free pairing (which imo is way better)

My suppliers are poorer than I am, they can sit out the back smoking whenever they like, if the vegetables aren't good I just tell them and they bring better vegetables most of the time. Or I don't buy the vegetables. Abusive head chefs do not get better vegetables, they get the worst suppliers. Then they cheat those suppliers, have no vegetables, often, often they get beaten up by an angry supplier, truck driver and farm manager.

I didn't get anywhere by burning myself, yelling at people, exaggerating my work ethic, being manipulative or hyping myself up. My kitchen is a happy place, we make food, we probably make more money than venues with better reputations than ours. Staff come, staff go, I'm nobodies dad, nobodies mom, I'm an employer and I pay everyone on time and throw greasy sex pests and bullies out of our workplace. Yes, you have the people who got into it for the love of food and cooking, but about half of them leave “the industry” for greener pastures and just use their skills for their families and friends.

Covid did great things for the people stuck in the kitchen, yes in the short term most people lost their jobs, but most made the same or even more with the trumpbucks pandemic pay that they got.

The talented ones with means or entrepreneurial inclinations all started catering, meal prep, chefs night dinners, and other side hustles that they discovered made them more money than 60+ hours a week on salary …add never having a night or weekend to enjoy on staff and comparing the workload of the side hustle to that and even more good people left…

My fiancé is a culinary trained chef at a fancy country club. She’s worked big name casinos from their buffet churn to black tie affairs, Michelin star restaurants, intimate date restaurants where she curated the entire menu and made everything from scratch, and it took the Covid shake up to finally get her paid properly.

She got into it for the love of cooking…but she’s told me that if she knew that she would work a decade before reaching a point where she got decent pay (fucking waitresses took home more for less hours and WAY less work) and would never have a weekend or a normal work life balance she would have never gone to culinary school and just impressed people with her cooking like her mom did.

So at least the ones who can actually “chef” and keep the kitchen running are getting paid now, even if they have to play tard wrangler with the staff of degenerates to get it.

working in a professional kitchen is like posting on 4chan, if you stay in that environment too long you end up having things about your personality/the way you interact with the world be off
