Do you maillard your cheese?
>>
When I make a microwaved cheese I do
The cheese that's touching the sides of the bowl fry and go brown
>>
>>20982325
yes, last step of pizza cooking is always broil
>>
>>20982325
Absolutely. I won't touch a pizza unless it is slightly well done.
>>
I don't really care that much anymore about anything. The cheese could be frozen. I don't care. fuck it.

mail order cheese? no I just go to the store
>>

maillard is what foodies call it when you burn your food.
>>
If you use pre shredded cheese you are mayyarding cellulose powder.

Typically Neapolitan cooks the cheese until it breaks and oils off but doesn’t brown.

no but I mallard my duck
>>
I ALWAYS ask the pizza men for well done pizza. Been doing it since the 90s. It's the only way to go.
>>
nah i don't like it splitting, plus pizza is already really sweet
>>

So a pretentious excuse for serving shit on a plate. It’s right up /ck/‘s alley. What a fucking horrendous board. Not the boards fault tho. Just the poorfag “chef” larp that kills anything interesting posted.
>>
>>20982674
I do this too, but so the dough isn't raw. It doesn't help, I've seen them prepare my pizza. The oven is a conveyor belt, they don't cook it any longer.
>>
>>20983075
Why don't you stop eating fast food pizzas where they employ an impinger and go with a place using proper ovens?
LOL, you only eat Domino's and Pizza Hut. You don't get to be picky, cheapskate.

This board is like 80% fast food restaurant and processed junk food discussion. Do we really need more BK and McD threads about chicken nuggets and sandwiches and 'oh these prices'? Do we really need to discuss your favorite Dorito flavor or Mt. Dew color? Or what 90s cereal "THEY" took from you and now you'll never find happiness because your exact brand of sugary garbage you enjoyed when mom and dad were still together is no more?

Fuck you. This thread is better than most of the shit here. It's about actually cooking, not just being a fucking consumer.
>>
>>20983089
fuck cooking. fast food is great, cooking sucks. go reddit
>>
>>20983083
There's 4 pizza places in walking distance from me. None of them use real ovens or employ real Italians.
I stopped buying pizza because they always me the shits. Just make them at home now.
>>
>>20982325
DUDE I got a sick Maillard going thanks to the Leidenfrost effect on my high carbon steel pan! Just need to get my sauce emulsification going before pumping up those Scovilles with the capsicum! Holy heck, my bone broth is gelatinizing! I'm getting friggin pumped, those proteins are getting SO denatured and the collagen is hydrolyzing up real nice right now!

>The oven is a conveyor belt, they don't cook it any longer.
They're supposed to slide it back into the middle of the oven after it comes out the other side. Sometimes they're so busy that there's no room to slide it back in because there's just a steady stream of pizzas along the whole conveyor belt.
>>
>>20984676
When I worked at pizza hut, well done meant simply putting it through again from the start. I can't imagine having to somehow shove it back into the middle of the narrow conveyor space.
>>
>>20982325
Sometimes, and it's damn good when I do.

>well done meant simply putting it through again from the start
>Here's your well done pizza bro.
Putting an already cooked pizza back through the oven for the full cook time would burn the shit out of it.
>>
>>20984689
I did this all the time at Domino's if it wasn't clogged up, just because I'm an artist. Sometimes with a loaded pizza (shitloads of toppings or extra cheese) the cheese came out undercooked, so I'd just touch the pizza with my paddle and slide it back about halfway through. Get gud.
>>
>>20983107
I wonder which is more reddit, pretentious cooking or ordering from doordash
>>
>>20984941
Clearly DoorDash.
