Korean food is basically glorified spicy Slavshit food with extra vinegar and a few Asian trappings like tofu and rice.

It's an underrated Asian food, not overrated. Its Japanese food on roids.
Kimbap moggs sushi because the variety of ingredients are just limited to a small selection of seafood and a small selection of vegetables. Spam, eggs, chicken, cheese, fuck it. Wrap that shit in nori, who cares.
The purple multigrain rice is a marked improvement on regular rice, albeit a pretty insignificant one.
Doenjang moggs miso.
The stews are great, doenjang/gochujang/kimchi based stews are really satisfying, and like any stew are easily modifiable to more familiar western ingredients- chuck some potatoes or ditalini in there, it fits right in.
The whole banchan concept is great. A lot of their side-dishes are admittedly quite one-note (pickled stuff, stuff with baby anchovies or shrimp paste) but it brings variety to every meal even if you just have half a teaspoon of each with your rice.
Dipping stuff in ssamjang is equal to or greater than dipping crudités and breadsticks into hummus/pesto/garlic sauce etc.
And finally they embraced American style foods to an extent so they aren't afraid to experiment with the kind of shit you would see at a US state fair: korean corn dogs, sweet potatoe ice cream, fun stuff. They also have this cinnamony persimmon drink I don't remember the name of I tried when I was over there, and good booze. Korean food is a solid B-tier, if I was in a better mood I might give it a low A
