I make saag paneer out of just about Anything, kale, nettles, obviously it's a bit more fibrous but that's fine.There's no better way to use all the edible greens from your garden like beetroot leaves, sorrel, broad leaf spinach.Going to try blending then ricing the greens to get a better texture when using mixed greens. It's pretty common in India to get this with potato. In rural areas they don't blend the spinach it's just thrown in with stews
