Tomorrow I'll be making 2 kinds of ravioli. Cheese ravioli and Lobster ravioli.
You didn't mention cheap, so let's use my lobster ravioli as an example. It's sort of a bitch to make as you'll be making the dough from scratch as well as the filling (which is only like 4 ingredients) but once you have the ravioli made it can all be frozen. When you're actually ready to cook it, all you need to do is get a pot of water on the burner and get started on the sauce which is as easy as saute a shallot, add wine and let it reduce for 4 minutes, add whipping cream and let it cook for another 2 minutes, add some chopped sage and thyme, salt and pepper. By the time the sauce is ready the water should have been already boiling so you can toss your ravioli in as soon as that, let the sauce cook on a lower heat until the ravioli is done (if it's not already) then toss your pasta in to the sauce and spoon the sauce over for a couple minutes until it has reached a desired thickness.
Shouldn't take longer than about 10 minutes of actual cooking and if you've never had white wine sauce before it will be a shock to the system. The fancy ravioli is just an excuse to make this sauce.
