well the issue is that if you are not a "picky" eater you don't understand what is happening. most "picky" eaters have a stronger sense of smell and taste.
we can smell or taste things in food that non tasters can't, and let me tell you there is some nasty tasting/smelling compounds in many foods.

my dad could eat anything but even he had foods he didn't like. raw onions and mushrooms.

my nephew is 30 years old and an airline pilot and has struggled with picky eating his whole life. he has expanded his palette a little but he still finds many food flavors overpowering. I used to be able to name all the things he would eat.

I found that when I was young many foods had tastes and smells that would overload my senses. I could not stand ham, but liked bacon. loved over easy eggs, hated hard cooked eggs. peas would make me gag and nearly vomit. most vegetables are bitter and have tastes and smells that are vile (no matter how they are cooked). beats taste like dirt. broccoli tastes like poop smells even when grilled or insert your favorite way to cook them here. brussel sprouts smell like rotting meat and have a terrible taste I cannot begin to describe even when cooked your favorite way.

as I have gotten older I have been able to enjoy many food that I could not eat as a child, like ham, but there are still foods that I cannot stand even the smallest taste of like fish. could I eat these foods if I was starving? of course, but I'm not starving so I won't.

also why do people get so butthurt when other people don't like the foods that they like? I don't get mad when someone says they don't like things that I like: medium rare steak, spicy foods, under cooked bacon, etc.

I find broccoli that are stir fried or blanched, still retaining some crunch, taste pretty decent. Once you fully cook them or prepare them in any other way they always suck.
Other foods that I dislike once you make them into a sauce, as long as you don't put much of it, they become palatable.
One example that shocked me when I discovered it, pickled jalapenos I can't eat them normally unless you put them trough a blender with some pickling water. I have no explanation for this.

I was the same way when i was younger because I cannot stand anything that tastes fishy, but there is plenty of seafood that does not taste of fish when extremely fresh, either raw or cooked. Flatfish (fluke, sole, flounder etc), striped bass, cod and grouper come to mind. Scallops (unless extremely high quality and under 1 day old), certain crabs, and swordfish are only good cooked, and tuna is only good raw. If you live in flyover country I don't blame you for not liking anything that comes from the sea, I imagine everything i mentioned would taste fishy if it has to be transported hundreds of miles inland first.

A lot of them have had a bad experience with the food item they avoid, be it physical or emotional ('mom used to force me to eat brussel sprouts when I misbehaved', someone in a rideshare told me this once).
A few have genuine stomach or dietary issues that aren't clearly diagnosed and are often just food-related anxiety (yes, yes I'm not making this up) which makes them avoid anything they haven't privately tested and vetted beforehand.

But like 90 percent are the way you describe them though, I had a friend swear he hated all cheeses when I met him, this NYE's eve he was scarfing down Morbier faster than anyone. People are scared of food when they could very well just try it and decide later if they like it enough to continue eating or not, they just need encouragement.

I'm in the exact same case. I barely touch sugar, tea or coffee and still have weak-ass teeth riddled with cavities despite following all dentist's advice since I was kid wearing braces. On top of that I can't drink cold liquids too fast or it shocks my left bottom wisdom tooth, so I have to do this retarded inner slosh to bring the liquid to temperature if I want to savor something.

I used to feel the same way until I moved to a country where mushroom picking was a common hobby. I still don't appreciate all the subtleties of different flavors and textures, the right time to pick a mushroom etc but I look forward to autumn every year now because of mushrooms, it's expanded my culinary options even though I still think it's way overrated (besides truffle since it's so pungent).

If you want the microbiome of a particular other person, you need a pretty aggressive round of oral antibiotics (the kind you swish in your mouth a lot and that a dentist can give you, not a kind that you swallow) and then very vigorously make out with your donor, involving a lot of teeth scraping (just swapping saliva is nowhere near enough).
If that's too hard, there's also a biotech company that recently started shipping an engineered strain of tooth bacteria that can out-compete your native bacteria (it produces an extremely mild antibiotic that it's immune to itself, so it slowly overtakes your native bacteria) and it also doesn't produce lactic acid like the strain it replaces does, so it drastically reduces your rate of tooth decay and cavities. Can't really recommend infecting yourself with experimental engineered tooth bacteria, but it's a surprisingly cheap option if you want to go that route.
