The "need to wash rice for 10 years before you can even start to make sushi" is basically just a shit-test to make sure you're not some faggot casual who'll quit.
It means the only people still left after 10 years of washing rice for $8/hr are the actual, dedicated wanna-be sushi chefs.

Also 10 years isnt really that long. Most normal apprenticeships are 3-4 years, the longer ones like Piano Tuners apprenticeships are 10 years (not counting 4 years of a university degree required beforehand, plus a decade or more of actual music training, practice and exams to get to that stage).
