You also didn't include they're extremely filling. I used to eat like 2 cups worth of mashed potatoes in the morning and be full the entire day. They're the perfect binge eating food because they're so filling you'll feel stuffed before you eat too much. I'm like 145 pounds (not saying this is a good thing, I look skelly at my height) now because I just started eating mashed potatoes everyday for awhile and it'd keep me satiated all day on only like 500 calories.

I love potatoes too. Last time I bought 20 lbs of russets and cut them into big fries, blanched them, then fried them about 2/3 of the way, then froze the whole batch in 3 ziplock gallon bags. A handful in the air fryer at 400 for a few minutes and they're super perfect, fresh cooked tasting. The 'air fryer' i use is actually one of those microwave combination units they make these days, so when I need a microwave I have it but the air fryer function has proven to actually be somewhat useful

Mashed potatoes are always super easy and very tasty. I like to add a lot of butter and sourcream to the potatoes when mashing/blending it up, makes a great consistency and naturally all that extra fat and cream and salt can never hurt

There is a question though that i didn't follow up on the last time it came up in threads that i remember. how do you make potatoes last a long time in storage these days? it seems like store bought potatoes don't preserve even in a dark pantry

I actually bought a 5lb bag for $3 a couple weeks ago. Had a few meals where I just baked 2 of them, cut them open, and tossed some cheese on em. However, something wasnt quite right.

I decided to instead try to make potato skins by baking them, scooping out the interior so that it was an roughly evenly shaped little boat, then tossed the cheese and bacon bits and chopped green onion in. I used some of the interior I scooped out for breakfast later.
I didnt have sour cream but thats okay. Something still not quite right.

My next attempt I might try boiling them in salted water and chilling them before I attempt to make potato skins.
