Yeah I baked mines at the same temp, first 28 mins lid on but then 20 mins without the lid. Good job. Some people like it with a lighter crust anyways.

Why do you need to put dough in this vessel before putting it in the oven? Why dont you have to do that when baking other things?

Those pans are to preserve moisture so the dough rises nicely in the beginning stage of cooking. You can create moisture with other methods, like having a moist towel in the oven, or throw ice cubes, or a contaiter with water. All of this only for the first 20 mins, then take the water out.
