I picked up an induction hot plate to have a hot plate, to see what the fuss was about, and for the lulz. They're not bad. The temperature control mode is neato. The 120V hot plates don't boil big pots of water any faster than a gas or 220V stove, probably slower. They regulate better at very low output than a gas stove so great for simmers. Probably great if you make scrambled eggs like Marco Pierre White, which I don't.

my induction stove lets you set a specific temperature so I'm not sure what you're talking about here. This lets me temper chocolate without using a double boiler

As a teen I cooked on gas, and it was fine. As a student I cooked on electical, and it was alright. Induction is just improved electrical. Does it matter which one you go for? Not necessarily. But I think induction is pretty neat.

I genuinely dont know how you think this holds up. I can buy a TILLREDA double induction stovetop at Ikea for 90 eurodoos, the VILSTA four-pit is 200. A four-pit eletrical non-induction stovetop is 170. The cheapest gas option is over 300. even worse, instead of continuous lower strength, they cycled on/off at low heat steps. which exacerbated the problem of keeping a consistent temperature with the bare 12 steps. the noise(s) are also annoying, but that's not the main problem. they're not predictable. hate them.

I've had an induction stove for 4 years and it's amazing. But the girl I'm with moved into a new apartment and the built-in stove there is unimaginably retarded.

1) The buttons to control the stove are part of the fucking induction panel, so they get so hot you can't even touch them (on my stove they are on the side and controlled with dials like a normal gas stove)

2) they go beep fucking beep every fucking time you remove the fucking pan from the fucking stovetop (my not-shit stove does NOT make such a noise)

What was the design intention between this?

The air is an excellent insulator. Look how closely spaced that coil is, it just has air insulating it. The air gap to avoid arcing is probably less than the thickness of the glass, so not only can you get the pan closer to the source, you wont have the layer of glass with its poor relative permittivity attenuating the electromagnetic field.

if you want actual temperature control, you need something like this with an actual sensor in contact with the pan. however any decent stove will use some form of high frequency PWM or inverter control to regulate power. the cycling that you see where the stove turns off for several second just doesn't happen in any decent, modern induction stove, unless the coils are overheating and it is entering in heat protection mode, which just should never happen if the unit is properly ventilated.

i'm talking about the insulation on the magnet wire that makes up the inductor (coil.) most magnet wire is rated to 150-200C operating temperature. glass is placed between the magnet wire and the cooking vessel to keep the hot cooking vessel physically separated some distance from the coil. if it weren't there, you could melt the insulation off the coil by means of heat radiating off the cooking vessel. this shorts the coil out and severely decreases its inductance... which causes the current through the IGBT/FET to shoot up -- and if the control circuitry has shitty current limiting, it'll cause the IGBT/FET to blow up with a loud bang and some fire/smoke.
