The last cookies i took a photo of, just chocolate chip. The last cookies i made were butter cookies with lavender topped with lemon icing which was delicious.

>>21090422>You hand pollinating the vanilla too?yea, the cocoa is actually a lot hard to pollinate because the flowers are so tiny and fragile, it took me a few years to get more then one pods. you can't really see it but in the back under some screen the vanilla is standing upright and is actually about 45 feet long just wrapped up and down a few times, it was laid down in the first pic because of a hurricane.

>>21090624So I haven’t sourced in a long time. I’d get my cacao butter from numerous places, same with green beans. I’d roast them myself with a popcorn popper.A few of the places I used to buy from regularly seemingly shut down. I’ve also moved on from cacao to other similar endeavors in the same space, but cacao is no longer my main focus. What’s actually in my cookies and running through my machines aren’t cocoa beans/fat :^) Works and tastes enough like chocolate though!If you want to get into this hobby a simple bench top grinder is around $250 ish. I bought a small tempering machine before my fbm aura for around $250ish. I genuinely hate the steep the buy in is for chocolate is. At the same time WM chocolate in Wisconsin used to run a chocolate company using solely bench top models. Idk what his tempering machine was like, but I’m guessing it wasn’t a $10k atlas stone bitch like my own. So idk. Rambly. I haven’t been in the direct chocolate world for a number of years.
