I've been unsatisfied with my carne asada attempts most of the time. When it comes out perfect it's because I bought meat from the butcher with their marinade already mixed in with it. You need charcoal, non negociable. Carne asada is more about the grill than about the marinade, prepared meat for grilling is usually just a bit of orange juice, salt and pepper. >>21089681The marinade is almost always Chef Merito + lime juice or Chef Merito + orange juice or a combination of Chef Merito + orange AND lime juice. The sugar from the orange juice is probably what is creating that 'crispness' on the meat from the sugars reacting to the heat.
