I've been unsatisfied with my carne asada attempts most of the time. When it comes out perfect it's because I bought meat from the butcher with their marinade already mixed in with it. What I want to figure out is, what can I marinade my meat in to accomplish the same thing?

I want something that crisps nicely and doesn't taste overwhelmingly of lime juice
I've thought of going back to trying to mix in mayo, or something, but somebody here must have it figured out by now
I cook them on stainless steel, not over a grill

You need charcoal, non negociable. Carne asada is more about the grill than about the marinade, prepared meat for grilling is usually just a bit of orange juice, salt and pepper. Maybe try burning some charcoal on a container and keeping your meat inside a few minutes after cooking.

Charcoal container idea is really good. Yeah it's because I'm restricted with cooking method (no easy way to do true grilling indoors, I don't have a big ventilation system etc.) but a small smoker box/cloche might help here. Cool suggestion guy

The marinade is almost always Chef Merito + lime juice or Chef Merito + orange juice or a combination of Chef Merito + orange AND lime juice. The sugar from the orange juice is probably what is creating that 'crispness' on the meat from the sugars reacting to the heat.

as someone who worked at a butchers, our marinade was soy, lemon, garlic, chili flakes and oregano
obv not authentic but the whities who can't make a marinade themselves loved it

Yeah im gonna pick up orange juice in boxed form so I can use it for situations like this without needing to go out and buy a jug of OJ everytime for random small dishes

Kenji is weird and needless to say his politics are quite extreme and definitely not lined up with the average person here.... But he makes good food and has good recipes so just try to ingore everything about him and read his recipes on their own.
