Marlboro Man, I got it from some website years ago. You basically just fry chili flakes in olive oil and then stir the oil into some mayonnaise. I also add a little paprika to the oil while it fries. Then black pepper and lemon juice to taste. The slightly burnt paprika really just adds incredible depth to a sauce if you like mild bitter notes.

I also eat some raw onion or jalapeño on the side as a palate cleanser between bites. Exquisite.

Growing up all of my neighbors were farmers of one kind or another. The only ones we actually trusted were the people across the street who had about 20 acres, so a modest farm, of various fowl, goats, pigs, and many bee hives.

My dad would insist on buying all our pork products from them; pork roast, ham, and bacon which they would make entirely on their property. I never liked it. It always smelled like the farm or maybe it was slightly rotting, and the bacon was cured but not smoked and it stunk like fæces.

Also their chicken and duck eggs were unpredictable; about 20% of them were fertilized and had bird fetuses or embryos in them and it was a horror trying to make french toast when you always had to scoop out this bloody blue-eyed bird every time.

Idunno anon, I always thought I was just a fuss-budget and these people are legit the best and most legit farmers in the neighborhood so we always have and still do trust them. Compared to the other neighbors who were basically running horror shows of animal cruelty and health department violations we always chose the good neighbors. it's the equivalent to the brisket and short ribs on a beef, just on a smaller animal, if you cook it gently for a long enough time it will be nicely tender
not as much meat as beef obv, but the juice can still be worth the squeeze if it's a large enough lamb
watch out for all the little cartilage'y feather "bones" that are opposite edge of the side where you can see the cut ends of the ribs
it will typically be boned (lazily) and ground so if you want it you might need to look around a bit

What your description of pork is is called boar taint. You were likely eating old breeding boars. Farmers candle their eggs, if you were getting red ring eggs instead of them being trashed it is likely they were free.

I'm more surprised about mint. It could also be that you're used to bold tastes, or the syrup/water ratio. I don't drink Monin or "good" brands quite often, but I tend to taste a significant difference compared to supermarket brands
