I don't get the point vs just using a pressure cooker or letting simmer in a big pot on the stove.

Slow cookers exist for being lazy/busy/not present
If I want to make food in the morning before work, and have the food done when I get back, I'm not using pressure cooker because it's not safe to leave it unattended for 8+ hours, I won't risk it.
I'm also not leaving my stove or oven on all day unattended (especially if gas), but mostly because the food won't turn out right, it requires being monitored in person.

Pressure cooker does have safety measures in place, but if something does happen to cause an explosion, you won't be there to do anything about it or prevent further damage.
As far as the food itself, after a certain amount of time, there's natural pressure release so the longer your away the more your intended food texture/flavor will change due to the pressure leaving.

It's a heat output thing. The little simmer burner on my stove is hotter than a crock pot on HIGH. That little simmer burner can make and keep a stockpot boiling on it's HIGH setting.

The advantage of the crock pot is low heat that is spread out by the ceramic cooking vessel. It's strong enough to cook stuff, but weak enough to make it take forever.

You can leave the stove unsupervised. I've done it before, but if you have stuff like pets - not safe. Those retarded animals can knock shit over and not only set themselves on fire, but set other shit on fire. Doing that to the crockpot won't harm anything - it makes a mess, but it won't kick off a house fire.

Same with any of the electric pressure cookers - they are fine to leave alone, but they are technically done in 1-2 hours, so if you are at work it's kinda dumb to leave food sitting in WARM for 6 hours +. Plus some auto-shutoff, and now you have cooked cold food at room temp, growing shit in it. Crock pots take 6-8 hours, perfect for the exact time you are gone for work.

These are mechanical pressure cookers. You need to supervise them because they need to be manually temp maintained for the right amount of pressure release (the spinning cap on the top). Forget about them and they explode.

Electric ones do not have this problem. They have safety relief valves and shit. BUT they still finish cooking most things in under 1-2 hours - that's the whole point of pressure cooking - cook shit that takes forever FAST. Not a great idea to leave them done in WARM or done and off while you work for the next 6 hours and change.

Crock pots are great because you load them up before you leave, they cook shit for 8 hours, which is a shift, and boom hot food is ready when you get home. As long as your wiring is not shit, you won't have a house fire.

Cooking on the stove also requires a bit of stirring, or you can get shit stuck on the bottom and it burns - so more of a practical thing rather than a safety thing. Not a problem for crock pots since the ceramic helps spread the heat out.

If you have a pot with a very good fitting lid and a cooker (or oven) that reliably and safely goes low enough, you don't need a special slow cooker. A lot of people haven't got that.

also, people used to be righteously wary of old stovetop pressure cookers because you had to supervise them and make sure it wasn't under pressure or over pressure because it might pop

it's not like a modern electric pressure cooker like an instant pot that's self regulating and you can just leave it alone like a slow cooker

the point of a slow cooker/instant pot is you can let it cook for a couple hours, 12 hours, whatever SAFELY without eyes on it

I bought a crockpot when I had to live for half a year in a tiny flat with no kitchen for work and I never used the thing.
These days I use it to keep the cat's food warm for when she shows up (she's an outdoors type)

Newer crock pots have a digital 2-3 step programming, finishing off with a keep warm setting that never ever shuts off, which allows for cooking time and hours more to be away from the kitchen.

Personally, I don't use the crockpot much when I'm not home, but simply not to be tied to the kitchen all day. I have the freedom to do some gardening, hanging outside in the lake or the pool or a quick errand or two to the stores. I can walk the dog longer. It's just freedom that I won't burn down the house. The other nice thing is that it apparently uses far less electricity all day, probably akin to a light bulb. Since I live in a hot climate, I do prefer roasting in the oven for the texture and browning, but I don't always wish to warm up my kitchen for a couple of hours.

i cook my pork in a crockpot. thats just how is started and the pressure cooker makes the pork cook odd from having such little actual cooking area at a weird spot. the crockpots seem superior to me as long as time isnt an issue
