In my family we have been fermenting cabbage and veggies for probably over a 100 years and it's kind of a different process because we make it only in winter and we keep everything outside in the cold (on the balcony in my case). Essentially we use a 3-5% brine and we just put it out to ferment when it gets 10C/50F outside so by the time it gets colder its ready fermented and the cold will keep it from spoiling. >t. from Eastern Europe

I actually held back on the spices because I usually use cumin and paprika as well, but I found out in a previous soup that they don't go well with the chili sauce I have. soysauce goes well with it though which is why I used it instead of salt.The only unusual ingredients are the peanuts and the apple, which is why I said it came out better than I was expecting.I had a bunch of peanuts I bought last month that went stale, but I didn't want them to go to waste. And the chili sauce I used already has peanuts in it (pic related) so I figured it would be worth a shot to try it.The peanuts ended up tasting a lot better than I was expecting. They taste different after you cook them. So good in fact I might end up using them in future soups as well.I can't taste the apple at all but I just threw it in there because I didn't have any fresh vegetables.

A lot of soups have way more types of veggies in them that what I used. the flavor that shines through the most is the chili sauce I used. I used to use huy fong chili sauce, it didn't have as strong a flavor and it was an easy way to add some spiciness to my soups. I haven't been able to find it in years, but today at the grocery store it was suddenly back in stock so I bought a bunch.I expected the thread to 404 by now but people keep bumping it to defend me. But I never said it wasn't slop. Sometimes all you need is some tasty sloppa.
