My grandmother, before she died, used to hollow out GIGANTIC fucking carrots (winter ones) and stuff them with the carrot innards cooked with onion, rice and spices (basically a pilaf) then glaze them with pomegranate syrup/molasses as they roasted. I was never a fan but maybe you'll enjoy traditional Durkastani food you'll never see in restaurants more than I do. : )

After posting this, I looked it up and it looks like it's traditionally made with black, purple or red carrots, in decreasing order of preference but I guess nan could never get the right ones in Western Europe and just used orange ones.

It has a bit of sweetness, but is quite sour, in a non-citric way. Which is good, since citrus sometimes fucks up other flavors.

I was once told it is used to make barbeque sauce, but I guess I misremembered because I think they use blackstrap molasses for that, either way I am going to try making some BBQ sauce with it because I can't imagine pomegranate being a bad flavour profile to add. I have an idea to oven roast onions, tomatoes and peppers which i'll blend/combine with spices like cumin, paprika, garlic powder, black pepper and dried herbs to a tomato base, either ketchup or tomato passata, maybe it will need some vinegar too.

Its either going to taste like bbq sauce, nothing like bbq sauce but good, or total shit

That's not a bad idea! In fact, I'm gonna use some in my baking instead of actual molasses and see how it goes.
