Local take on Harissa which is basically 90% chili peppers 10% salt. Great in cottage cheese.

Really good on the side with Jap/Indian curries (not really great with thai). Great with fried or scrambled eggs. Going to figure out how to best use it into steak dinner. Also Tabasco. I feel kind of bad. I always said it was shit compared to the other sauces they shelf it next to in the stores, but it's not a salsa, it's pepper vinegar. Only realized how good/versatile it was when I started using fancy Chinese black vinegars as or in dipping sauces

Um... the missus makes her own powders, if that counts? She dries chilli herself and keeps them whole until it's time to be used then she powders them by hand. The only ones she does I've never seen anyone else have are the weird colours. Like, I've never seen dried green, yellow or orange chilli not yellow paprika but what she dries. I remember trying to dry green chili myself some years ago but they all turned red during the process so I dried them using a dehydrator instead and they tasted weird. She manages to keep them green and keep the "green" flavour.
Harissa is my go to, gives a lot of spice while tasting grear. Sambal oelek tastes like shit, sriracha is delocious but more of a condiment that doesn't go with everything, franks hot sauce is something i have but don't really use.i also have self made red chile sauce from ancho, guajillo, chipotle etc. dried chilis. pretty damn good and can be used as its own sauce rather than an additive.
