Sake is not easy to make, but you can very easily make a fruit wine with apple juice. If you don't care about taste you could even use turbo yeast and pure sugar to make 20% sugar wine.

sake is one of the more difficult alcohols to make. for wines and cider you just have to get your fruit juice and add yeast (you should also add yeast nutrient, but that's still easy). it'll be better if you add some powdered wine tannin or age it in a barrel, and add some powdered acid or even lemon/lime juice, but that stuff is still really easy.
beer is more complicated, since you have to buy malted grains or malt them yourself if you really want to be hands on, then steep them in 150f/65c water for like an hour to activate the enzyme that converts the starches to sugars.
sake on the other hand, you have to cook rice, then inoculate it with a specific mold, and then you have to keep it warm and moist while the mold spreads and converts the starches to sugars for the yeast to eat
if you want to go the easy (and cheap) cider/wine route, there are two things to look for when buying fruit juice at the store. first, make sure on the ingredient label it doesn't list any preservatives like sorbates or sulfites. if you're american, then the seasonal sweet ciders stores have in the autumn and winter usually have those preservatives. they're no good. ideally the ingredients are just juice, but it's also fine if it's water and juice from concentrate, and ascorbic acid is also fine
this probably only applies if you're in america, but the other thing to make sure is that it's 100% juice. those juice cocktails are a bit cheaper, but I can't imagine they'd be particularly good. you're buying flavored sugar water rather than actual juice at that point
/diy/ has a homebrewing thread if you want more information
