Many recipes (in baking) call for large eggs. Out side that, yeah, I get medium eggs, but I know families that get jumbo eggs for some reason. (A size grade above Large.)

Large eggs come from older hens. This is literally why they are larger.

Meaning they are more brittle and have the same amount of nutrients, just spread across a larger egg.

because if the eggs have inconsistent sizes you will get inconsistent results when baking. if all you do is cook eggs for breakfast then yeah medium eggs are fine.

That's not true.
When we were members of the EU, eggs always had Large or Medium markings (along with Organic, Free range, or Caged markings).

They still do.

One thing I have noticed anon, is that Organic, Free range eggs are often priced cheaper than caged hens??

I think this is a move by supermarkets to 'Prove' that the British public prefer these to caged hens . . .even though in reality, caged hens should have cheaper eggs.
