You can find cheap wine, or you can just substitute with stock, wine is just for deglazing most of the time, and you can deglaze with just about any liquid really, even plain water if you're really desperate; hell, a lot of pasta sauce recipes call for you to use the starchy pasta water to both deglaze a pan, and thicken the sauce. Most French sauces are just deglaze and add butter. Wine gives a dish a little extra sweetness and acidity, a little depth of flavor, but it's not necessary if you're really hard up that you can't afford some rotgut only good for cooking. fuck it, buy a natty ice and deglaze with that lol

Listen, kid, if hobos can find a way to get blackout drunk every day, or get high as shit on meth and fentanyl every day, you can find a way to afford a box of cheap wine that you only use for cooking, it pretty much doesn't go bad. Just treat it like any other staple, you don't complain that a bag of flour costs two bucks, because you're going to be using it a lot and it's cheaper in the long run. That four dollar box wine lasts forever, you're using a few cents worth of it in most of these recipes.

Most pasta recipes. Aglio e olio, it's just pasta, oil, garlic. Carbonara, eggs pasta, Parm, bacon (guanciale is not an easy to find or cheap cut in the US). Cacio e pepe, pasta, black pepper, parm.

Just buy boxed wine, it's unironically cheaper and higher quality than bottom shelf wines. They're able to offset the difference because they sell bulk and with cheaper packaging.

Also, stop worrying so much about wine when you cook. Nuance and flavor only matters in wine when you're drinking it from a glass, people aren't going to notice those distinctions when you've literally had meat soaking in it. All you really care about for cooking purposes is that it's acidic, grape flavored, and doesn't taste like shit.
