Why does fresh beef mince smell sweet and rich but beef steaks just smell kinda metallic or slightly sulfuric like a hardboiled egg core?

Steam your beef and it will still taste sweet. We had a thread or two about steamed burgers (steamed hams lol!!!!) a few weeks ago and more than one anon corroborated the attributes being unique and worth trying.
You are right, beef changes flavor and taste profiles significantly from its raw state after being heated, but how much it changes varies even more with what type of heat (dry, wet, fire contact vs indirect heat and so on)
A steamed hamburger patty also looks completely different, even a bit strange, but it was very enjoyable to eat.

Raw beef when its really fresh and red has a almost garlicky marinated aroma. Idk if being in a place with plenty of farms around is why but goddamn these blessed creatures can be tasty
