Chickens are smaller and more manageable with smaller pieces. We also eat their eggs. I cook more turkeys than chickens throughout the year myself. I prefer it.

Chickens mature faster and produce more eggs so it just makes sense economically for chicken to be everywhere.
As for why turkey cold cuts specifically are more popular I don't know, its an interesting question. Maybe the whole taking longer to mature aspect plays a part? Like preserving the meat might have just traditionally made more sense and its just continued through to today, and people are accustomed to having turkey that way

I'd eat a shitty dry chicken over a shitty dry turkey 100% of the time, there's a reason why the only time most people cook turkey is only out of tradition and when it's drowned in meat-flavoured liquid.
