Chow mein is egg noodles tossed in soy sauce, oyster sauce, prob dark and light soy too and some veggies like bok choy and shit. Garlic, ginger, etc. It tastes like your typical chinese takeout flavors
Pad thai is rice noodles cooked in tamarind, palm sugar, and fish sauce usually also including dried shrimp, bean sprouts, and firm tofu; the whole thing is topped with crushed peanuts and green onions and served with a lime. It's supposed to have all 4 taste qualities: sour, salty, sweet, and spicy. And genger and garlic and shit

Japan has a very restaurant focused culture and western restaurants aren't going to put the effort into serving you 9 small bowls of different foods. Also a lot of the shit would be expensive to source in the US and people wouldn't pay the markup like octopus, daikon, wasabi, various mushrooms. Even squid is hard to get in the US and most restaurants use pig asshole because they'd rather commit fraud than pay for it.

When japs cook at home it's super basic shit since most of them don't even have stoves.

japs are super racist. I doubt any restaurant with a jeet on the staff would get any customers at all. restaurants in Japan also make barely any money so it's not exactly an attractive career choice. most restaurant workers are students, part time workers, or elderly just working to survive.

Lean Chow Mein.

Pad Thai is objectively more prep work/ingredient expensive to prepare to the point that it's only infrequently had in Thailand and almost never made at home and went eaten out is typically at restaurants where it's the only dish they make as a specialty. Pad Thai = US Pizza or Japanese Sushi in that way.
