This high ph is basically the same thing youre trying to achieve when giving dough a lye-bath to make pretzels. Just how much ph you need is a little different, so trying to made raymond noods with lye might be a lil funky, but when I'm making raymond nudes, I feel like I making pretzel spaghetti
