I fucking love soup, what are your favorite soups?

>>21112810I'm not sure you can go wrong with onions, it's still edible. But yeah, it takes care. I've tried different recipes, some call for cognac, some for red wine. But I've found white wine and beef stock is the best. Worcestershire sauce is also a must, to break it up a bit. But as I say, it's a ball ache to nurse through. As far as cans go, it's right up there with cream of chicken or cream of tomato.

>>21112861>>21112863Sorry to butt in guys but I too am a big fan of Cream of Tomato soup and I prefer it over vegetable. Having said that, on these cold winter nights I do like an Oxtail soup. Yes - broccoli and stilton is a nice soup, especially if it's home made.

>>21112757Cream of Crab is my fav. to make and it's easiest of them all. Just a roux, some cream and milk, a dash of sherry, old bay, and a can of crab meat. Keeps well and reheats well too for leftovers. Lobster and shrimp bisque are my second favorites, more work and time to make, but done in about 1 hour. Seafood soup is also the bomb, but it's even more of a pain to make, so I don't do it that often. Pot pie soups are actually surprisingly easy to make and are way better than the canned version. Plus you can top em with mash or pastry crusts for extra flair. Ramen, while I like it, I've increasingly gotten tired of it's salt content over the years (both restaurant version AND instant kind share this problem). Pho just works better for regular consumption.

Mom once made a "baked potato" soup that had bacon bits and cheese in it, that's the best I can remember.is Gruel a soup? I love ham hocks and neck bones and all that

borscht is probably my favorite, love it hot or cold.french onion and miso soup but only if done well, most restaurant versions tend to be mediocrecrab or lobster bisque but bisque is a treat with how pricey either main ingredient ismy mom makes a delicious ham and bean soup, I'm not sure if I'll ever make it myself because I don't eat much ham outside of the holidays, but it will always be a fond memoryfood long after she passesone of my underrated favs is vichyssoise or even just the OG potage parmentier without bothering to puree or add cream/milk. extremely easy to make at home given its fancy reputation yet delicious, I like to make it in spring or summer.
I made a minestrone once and it was good for like the first 30 minutes but I made way too much and when I portioned it out for storage it got all soggy and I had to force myself to swallow the soggy noodle vegetable slop for the next few days.

>>21112757when i was a picky child i hated soup sso much but then i tried cullen skink once and it opened my eyes so it think this one is my favourite. but more often i eat leftovers soup, you can fry onions or leeks and add pretty much anything to a little broth until it all softens then you add some more broth until the ingredients break apart, then i blend it and in the end the result is always unexpected but pretty good most of the time. recently i cooked soup out of old fries and leftover chinese food, there is so much food being thrown away at my moms house that i really enjoy visiting from time to time to make use of stuff they would compost othewise.
