what do you do with beans?

oven 350f
big pot
beans, 2-3 diced onions, woostyshire sauce, maple syrup, mustard, a couple cans of diced or crushed whole canned tomatoes, quality vinegar, and 1 lb chopped bacon (1 lb beans per 1 lb bacon)
4 cups chicken stock

stir every 45-60 min or when it starts browning a lot, stirring more often towards the end as it thickens up
its done when most of the liquid is gone and the beans have darkened a good bit
this will take a few hours
you don't have to precook the beans, but it will take longer, and you will have to add more water most likely

let them sit overnight. Pressure cooking them literally injects water violently into the cells, destroying flavor and nutritional value. Dont be a lazy fuck, let them soak overnight, or even a day. Be sure to use filtered water, unless you want to taste hardwater in each bean
