So I just got myself several cast iron skillets. Been great so far, but while cooking a lamb steak earlier, my apartment was filled with so much smoke the detector was that close to going off.I don't wanna be a bother to the people in my building by setting off the alarm, but I wanna keep using my skillets too. Any tips as to how I could reduce smoke?

But it has a LOT of thermal mass, meaning when you do apply heat it will keep absorbing that heat and get hotter and hotter.And because it retains that heat due to poor thermal conductivity, even if you remove your pan from the burner it can take several minutes to cool back down.

>>21114292They do that because it takes a long time to heat up, due to the low thermal conductivity. So they blast it on high because it takes 2-3 mins to heat up on medium
