It’s literally the opposite. Fermentation was developed across all cultures in the world precisely to prevent food from spoiling in the absence of reliable refrigeration.

The controlled proliferation of certain bacterial species serves not only to lower the pH of the food or solution thus preventing the growth of spoilage-causing bacteria,but also provides microbiological protection: the saturation of bacteria helps colonize the biological niche, so that when harmful bacteria inevitably come into contact with the food, they cannot proliferate. This had the added benefit of sanitizing food at a time when people had no knowledge of germ theory: individuals handling fermented food with dirty hands something that would have led sterile food to rot didn’t cause spoilage, thanks to fermentation.

The same thing happens in your gut: if your intestine is already colonized by these same bacteria (and in general teeming with microbes), then when you inevitably ingest some Salmonella or other pathogenic bacteria, they can't thrive because the biological niche is already occupied. As a result, you don’t get sick. On the other hand, in an intestine with few bacteria, the pathogens could gain the upper hand

In the case of natto, fermentation works remarkably well: it improves the digestibility of proteins through protease activity, leads to the development of nattokinase, a powerful fibrinolytic enzyme, and results in the formation of a remarkable amount of vitamin K2, specifically in the MK-7 form, which is essential for osteogenesis and is practically absent in fresh food.
Vitamin K2 is produced by converting K1, which is found in fresh foods, but the conversion process is inefficient.

Kombucha just tastes like vinegar, but kraut and natto are based and I fement both at home. I also am on month seven of my first batch of miso, I bought a cedar miso tub from Japan at a reasonable price hand made by some ancient craftsman. I heard the first batch out of a cedar tub can taste cedar-y and other people have said that's nonsense. It took a while to really get going, couple months, but now it looks and smells exactly like miso with a light hint of cedar aroma too. If nothing else it will be good for coating fish and things on the BBQ, but the koji is still a bit firm so I didn't taste it yet. That aroma might just dissipate.

The tub isn't super large, 12"x18" or so, but it'll easily be 20 pounds of miso.
