Yup. In the pan about 2 minutes on each side, then cooked the rest of the way in the oven at 375 until 120F and I took it out and let it rest.

If you have a meat probe, press weights and time, reverse seer is impossible to fuck up.

225F preheated oven

meat probe thermometer - set alarm to 102F

When it hits 102, pre heat pan super hot with some tallow or high smoke point oil

2.5 minute seer each side, preferably with a meat press weight

Wrap in foil, wait 5-10 minutes

I didn't this weekend I actually broiled a London broil top round and made roast beef for sandwiches this last weekend. Previously I made a ribeye I cut from a $4.99 rib roast I bought around Christmas time last year to celebrate another rewatching of Magipoka.

Eat more beef. Support your local farmers/ranchers and the beef industry.
