I'd agree try tweaking grind size and temp in that order first.
I enjoy brighter and really had to go finer than I thought to make it shine.
If you're already using dark coffee, osmotic isn't bad. I use a switch and appreciate the immersion aspect which can make it easier overall to get right

since this was a problem some people faced in the last thread and in this one, ill say:
if you are not telling the difference between two coffee beans that are from wildly different regions/process, it's probably that your water is too hard and/or has too much bicarbonate
try getting water (bottled or making your own) with hardness below 80ppm and bicarbonate between 30-50ppm, if bicarbonate is below that it will probably be too sour, this will 90% of the cases solve the problem
both cups might taste like shit, but tasting equal is a water problem most of the time

Don’t get caught up in the claritymaxxing meme. You made the right choice with the K-ultra at a great price. It’s the best overall general purpose hand grinder out there, maybe sans the M01 now but that’s debatable. At least in burgerland, I've never seen a K-ultra go lower than the $207 amazon holiday sale price. It’s worth the price premium over the K6. Better build quality, better ergonomics (straight handles fucking suck), better burr quality, burr stability and alignment (Izpresso is one of the only companies that secures the ring burr with grub screws so you can manually adjust the alignment to get it super good), magnetic catch cup so you’re not brushing grinds out of screw threads all the time. It’s a staple grinder that you keep for everyday general usage and maybe complement with a more specialized “high clarity” grinder like the ZP6 for those occasions that you are looking to brew really lightly roasted washed beans.

Entirely honestly I’m not even sure if the hyper expensive coffee is objectively “better” than the already premium priced specialty coffee, does it really not come down to personal preference at that point as all of the coffee at any price range of ~$20/200g is already going to be high quality. It feels like a bunch of people dick waving and convincing themselves the more expensive one is better because the price needs to justify itself, I would be shocked if the hyper expensive coffee from limited lots received >50% of the choice in preference when given in blind taste sessions up against a moderately priced specialty coffee.
With wine/whiskey I can forgive it to a degree since the processing required undoubtedly requires more skill and control, and these two commodities in particular actually develop better with age in many cases. With coffee however it’s constantly degrading and you have brown people picking seeds in Africa so the argument for boutique overhead isn’t there like it is for wineries or malt houses.
