Coffee Time
Featuring the titanium automatic 38mm Tandorio field watch with screwdown crown and even hacking! Which I just discovered. I set the time exactly so I can watch the second hand pass 12 and see the time change on my PC monitor.
Highly recommend picking one up. Right around 100USD. So lightweight. Rotor will spin forever; perfectly balanced. Sounds like casting a fishing reel when you flick your wrist.

I like cappuccino.
>>

No classes beyond the cuppings and tutorials offered by the roasteries near me, bought an air roaster, made some decent coffee with it, then realized the only real way to get that juicy feedback would be to roast enough to sell at a Farmer's Market and have the grim hand of the Free Market decide my fate so I bought an Aillio Bullet so I could roast to that scale.

Gonna try some of the coffee I roasted a week ago today and see if it matches or excels one of Counter Culture's premium offerings in a blind taste test. If I do that's the light roast locked in, just will need to pick a medium and dark roast, maybe a gimmicky aneroebic as a fourth offering.

Probably. But it would make more sense if the bracelet were also titanium. There are plenty made from stainless if that's what you want. Titanium was a lot of the selling point of that watch because of the weight. But if I changed the strap it'd probably be to an even lighter NATO style one.

Was running low on coffee so I made a stop gap blend consisting of
>60% Brazilian Capricornio Pionero
>40% Indonesian Java Condiroto Robusta
Surprisingly pleasant for such a stop gap solution. Usually I like to rest the robusta for 2 weeks before using to avoid any funky mustiness it but I also rarely use such a high percentage.
Has a bitterness akin to dark chocolate but the smell is a bit like green pepper and nutmeg which is disturbing.

I don't think humans are meant to drink water, otherwise how do you explain the obsession with tea and coffee and the associated all cause mortality reduction? The old unsweetened cocoa drinks were probably also very healthy.

Are you seriously trying to tell me that filters made of plastic and paper are tasting better than tasteless stainless steel?
The only alternative i would use is ceramic, but those funnels don't have that fine holes to prevent ground coffee to get into the mug.
>>
>>21842853
yes because paper actually filters properly while steel doesn't. steel also doesn't prevent fines from getting into the mug.
>>
>>21842719
>>21842853
Fine metal filters are impossible to get completely clean without an ultrasonic bath. Ergo, eventually the coffee they brew will taste bad.

it screwed poorly and it didnt lock in all the way, with time though i just kept using it and it got back to screwing all the way

If you aren't retarded keep an eye on ebay, marketplace, craigslist, restaurant/cafe closings, estate sales, govt auctions, restaurant supply, etc for used espresso machines. You can find some great deals if you just look a couple times a week for 6 months to a year even better chances if you set up some alerts. Most need minimal amount of work to get back in great condition. Especially this time a year a lot of people are selling old gear they upgraded or getting rid of xmas gifts they decided they don't want/like.

if filters objectively had zero flavor or odor of any kind, different paper filters would still impact the taste of the coffee.

If the paper isn't ADDING anything to the taste and your coffee tastes like shit after filtering, it means your coffee tasted like shit before but was masked. Its okay to prefer extremely rounded, muddy, opaque brews. There's a reason people still buy Niche Zeros for pourover.

You understand that the mecca of paper filters, Japan(and asia in general really) drinks pretty fucking dark roasts right? Kasuya's original competition 4:6 recipe was with distilled water to intentionally extract low. Osmotic flow recipes are for minimizing agitation that would otherwise overextract more developed japanese roasts.

I heard that zishin teapots are seasoned overtime by tea because it's made of porous clay. Do you think coffee will be improved if I use something like that and season it by brewing coffee in it instead of tea?
>>
>>21846266
my instinct is no, from how it goes with moka pots. if you go for too long without cleaning the accumulated coffee oils and such, it gets kind of bitter and nasty. could be different with clay vs. metal, but i personally would not count on it. i am curious how it goes if you do end up trying it, though.
>>
>>21846147
Thanks, I didn't even know "immersion" drippers existed. Do they change the taste significantly since they hold the water? I was initially thinking of something smaller though. There are drippers that fold up for example, or don't require filter paper (I.e. reusable filters) but haven't found any with convincing reviews.

I just got back from a trip to Australia where I tried espresso from a handful of cafes. Honestly, I'm wondering why they were all just below average to average. I'm sure they aren't known for their coffee, but surely at least one specialized cafe should taste better than mine.

Cafes target the masses by necessity. Most people like shitty coffee/espresso with copious amounts of milk. You don't need exceptional beans when you're shitting out flat white after flat white, so cafes just use cheap blends.

what?
greens are incredibly cheap?
what the fuck are you talking about?
tell us how much you are spending on greens.
unless you are homeless and $20 is alot of money.
>>21849289
before i roasted i had drunk a ton of specialty coffee from all over
so when buying greens i had a end point reference for what they greens should taste like.
and i had a visual memory of what the beans looked like(if you dont have a photographic memory you should keep a notebook with a picture of the beans for future reference)
so that when you buy say natural processed heirloom variety Colombians you can go back and see a time when you drank a cup of that bean roasted by a professional and then think of how to apply roasting basics to those greens to derive the desired result.
>>

learning on a new machine, hoping to ask them what's their cheaper bean source to get adjusted to it and go from there. Lots of practice-will make stuff for my parents and then slowly get used to lighter roasts. It's the sheer volume that's the issue. I'd be happier with a 5kg machine instead

fuck if I know, donating them? I'm not used to roasting on something so big either or such large lots.
I'd be down to get a sub 5kg roaster soon, but this one big ones available near me and I'll be learning on it, so maybe I'll start a 'micro roaster' but that's lofty since I have so much to learn and grow with. but appreciate all the advice and knowledge

Trying to work out how much caffiene I am getting each morning. I use 20g of ground arabica coffee, brew it in my plunger with 250-300ml of water for 3.5-4mins. 6-8 oz. Dark roasts have the least, Lights the most (fermented ought to have less than usual either way). I like ice yerba mate prior for the caffeine antagonists, mellows out absorbtion.

They are sample roasters. They are usually paired with commercial roasters that cost 10 times that or more. Commercial espresso machines cost more than those sample roasters too. You're comparing hobbyist gear with commercial gear. If you are wanting to buy a 5kg roaster you are going to be spending way way more than that and a few thousand for a sample roaster is nothing

and fyi you dont need expensive beans to do a certain roast profile
you can use trash and practice a profile.
just buy whatever you can afford.
like home chefs dont need to buy A5 wagyu to learn how to cook a steak a certain way.
>>
>>21851268
>and fyi you dont need expensive beans to do a certain roast profile
that wasn'tt he concern. evenness and managing temp matters more at a lighter roast profile, while charcoal coffee is gonna get roasted enough internally and on the surface regardless. I'm worried that I can't competently do a nordic roast, not that the beans needed for it are too expensive. I'm worried that it's a fools errand because I might as well not show up if I doesn't have a ROEST L200 or some shit.

I don't know what to do bros. I feel like getting into making coffee at home is a meme. Not counting a grindr and a scale, a Gaggia is like 500 bucks, whereas the stuff you need for V60 would be ~100. Like why? Not to mention there are espresso machines for 5k too. What a meme scam that is. Are they 10 times better than a Gaggia? No. I much prefer espresso to V60 as well. I could get an aeropress, but then I'd get FOMO and want a machine.

After all that, and at the end of the day, the coffee I make will never be better than what the barista at my local shop makes. She has access to top of the line gear plus she's cute. Why would I ever make my own coffee when I can have hers? She's also fun to talk to and she's nice.

I give up.
>>
>>21851482
>Not to mention there are espresso machines for 5k too. What a meme scam that is. Are they 10 times better than a Gaggia? No.
If you're making more than one milk drink back to back, absolutely. The gaggia has a 100ml boiler with both the grouphead and steam wand using that volume. Without dumping 25% of its cost back into mods, its extremely thermally unstable.
>the coffee I make will never be better than what the barista at my local shop makes
You'd be surprised.
>>
>>21851482
Just get the fucking Aeropress. If it makes you wanna splurge on an espresso machine, it's not FOMO but just stupid thinking because it's not the same brewing method.

And you don't really need that much to brew with a V60 really

>>

well by home made i mean made in my mums home by her haha
ill ask her for the recipe if you like.
but id imagine its just a generic recipe.
gluten free flour too
and i make the nut powder for myself to add to basically whatever and i was telling her about it so she did the same and made it into the some cookies.
nuts have so many good idk nutrients? and stuff that incorporating them as a part of your daily diet is really good.
but eating all those nuts whole every day is tiring so i found blending them and using them as an additive is much easier and tastier as the flavours combine and balance each other out.

>Did you add some larger chunks as well? Like peanut butter cookies made from crunchy peanut butter.
no, because im lazy and also because i want all the nuts to be in each cookie.
and i dont see how you could get an even amount of all the nuts to be in each cookie when in chunk form and still have a good texture.

oh i dont use pine nuts because they are too expensive to use like this
but you could use them to put on top before you bake it if you wanted some whole nuts in there.
oh and the nuts are roasted before being blended.
you dont have to but i think it helps.
>>
>>21852924

>Are you doing keto, or is the no added sugar/sweetener just personal preference?
i developed(?) an autoimmune condition that basically means i have to have a pretty restrictive diet
and cane sugar/artificial sweeteners + gluten were some of the first to go as they just made it worse for whatever reason.
and i was shocked out how sweet so many things in life naturally are once you are on a zero sugar/sweetener diet for a year.
so i kinda prefer it this way after all.
also there is the silver lining of losing weight and being healthier
also way better skin
and i used to dread summer or exercise because of how i would smell but turns out when you have a really clean, pure diet you really dont smell like anything.
no fat either
and as little oils as possible
even the "healthy" ones.

luckily im fine to drink coffee.

oh but i recently had to cut out cheese
milk is fine but cheese turned out to be a trigger, unfortunately

such is life.
:)
second coffee now
but i think i messed up
i did 2 blooms and 1 big pour and it tastes a bit to herbal for me
just trying something new
i usually do 2 blooms and then 3 small pours after that for about 400ml
i think this coffee is getting stale tho
rested for a month and now a week into it and i still have 350g to get through
and 2kg of other beans...
i over-ordered over christmas i think.
i hope your next coffee is good :)
>>
>>21853122
>luckily im fine to drink coffee
That's good to hear. While reading that first part, I was wondering if you had issues with coffee.
How is fruit for you? Dates and raisins are a nice way to add a touch of sweetness to baked goods.
And yeah, I agree. You don't realize how addictive and taste-blinding sweetness is until you get accustomed to a "bland" diet. Same thing goes for salt.

>milk is fine but cheese turned out to be a trigger, unfortunately
All cheese? Damn, that sucks. Is it the protein concentration? Maybe the milk fat? Do you eat yoghurt?

>this coffee is getting stale
When I notice that happening to my beans, I use a smaller/shorter bloom to kind of mitigate the stale flavour. Not as good as properly rested, but it takes that stale edge off.

>i hope your next coffee is good :)
Thanks. You too.
>>
>>21853158
>All cheese?
i only really eat cheddar or cheddar-like cheeses
so maybe there are some "lighter" cheeses that work
i generally dont like soft cheeses tho so idk if it would really be worth it.
its easier for me to just say "ok no cheese" and mentally move on.
i have a feeling its to do with the aging
as milk and cream is still fine.
> Do you eat yoghurt?
not in years.
>I use a smaller/shorter bloom to kind of mitigate the stale flavour.
i probably need to adjust my grind setting.

If you don't care about specialty coffee then you would be fine getting something at Aldi. Probably a medium roast. Colombia, Brazil, Costa Rica etc.

I'm from sask, but don't live there right now. I'm thinking about moving back though. I could buy a decent house in Regina, they go for 200k to 300k cad, but then I'd need to keep working - taxes and shit. Renting there seems pretty bad. Too many jeetified apartment complexes, and they're built like absolute ghettos.

You from there?
