Place egg, lemon juice, and mustard in the bottom of cup or jar that just fits the head of your immersion blender. The egg/lemon juice mixture must reach the blades for this to work.
Pour oil on top and allow to settle for 15 seconds. Place head of immersion blender at bottom of cup and turn it on high speed. Do not pulse or move the head. As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified. Refrigerate in an airtight container for up to 2 weeks.
Takes literally 2 minutes.

Sure, but I'm pretty sure rapeseed is the king of gutter oils. In my native language it actually has a fairly benign sounding name so it's not as easy to make fun of but health conscious people still avoid it like the plague. I also pretty much exclusively cook with olive oil so the little bit of seed oil I might ingest using mayonnaise or some other sauce or something really doesn't bother me.

One of my missions once I started taking cooking more seriously was to learn to make as many ofy own sauces as possible. For me it did not feel like 'cooking' if half the effort was in the form of opening a jar or can.

The portions of this study that are relevant to our discussion concern the negative effects PUFA has on the lipid structure of cell membranes and cardiolipin. Cardiolipin structure determines the speed of oxidative metabolism and disruptions of its lipid structure has been shown to not just harm metabolic rate but has been linked to cancer, heart disease, and various neurological disorders. In this study, human cardiolipin was exposed to linoleic or linoleinic acids which caused a remodeling of cardiolipin structure, primarily by displacing monounsaturated and saturated fatty acid layers, which in turn caused mitochondrial fragmentation. The degree of mitochondrial correlated with the degree of lipid unsaturation.

We know that that cardiolipin unsaturation increases with age, reducing metabolic rate as it does, while administration of fully saturated lipids restores metabolism to youthful rates. As the paper demonstrates, human lipid metabolism has evolved to favor saturated fats while plant lipid metabolism has evolved to favor polyunsaturated fats. As such, human exposure to what are essentially alien (plant rather than animal) lipids is damaging on a cellular level.
