Got a Moka Pot and honestly I like my shitty drip machine better. Quicker to brew, easier to clean up and I can't discern any difference in taste. Also I end up with some very fine grounds in my cup when I use the Moka Pot.

I would like to do a blind test to see if the claims about the little hole at the back helping with oxygenation (and thus bringing out more flavor/aroma) are true. I've been enjoying mine for a few months of daily use and love it. There's different sizes, but I got one of the bigger ones (~1 liter).

I don't think so, at least I haven't heard anyone mention that coffee suddenly flowing faster at the narrow part connecting both chambers is doing something to affect flavor—the Chemex also does that. The main difference with the Chemex is that it has both the small hole at the back and the spout connected to the brewing chamber, so you never have the issue of filter paper sticking to the method. As for how the flow of oxygen into the brewing chamber affects the coffee as it is brewing, I have no idea

i wonder if you could increase the oxygen content of water by just agitating the hell out of it. when i shake up my half-empty jugs of mineralized water, they seem to get a bunch if bubble but that might not be comparable to the steam wand. is there even a non-industrialized way to measure that?

I just made a pour over that tastes sort of sour... like hot lemon drink. I don't like it. Weird thing is that I used pretty much the same recipe I always do and even the same coffee. It's not specialty coffee but it wasn't bad. I'm not sure I understand what went wrong. Could it have been the coffee itself aging that did it? It was only a few days apart

Coffee won't change very much over the scale of a few days unless it's stored improperly. So it's probably something else unless you're leaving it in an open container on the counter.

grinder, grind size, dose, pouring technique, water imo matter more
like you can start at 100c every brew but change the grind size a couple clicks and have a greater taste difference than starting at 90c

I think he said in the video that water from a kettle is good, so I think the steamed water is just a convenient way to do it without needing a kettle. With filter you'd be using a kettle anyway, so doubt there's much of a difference if any in taste
