You can use the cheapest medium pre-ground from the supermarket, store what's left in the freezer in a bag (unless you want to go full retard with an airscape or something like it).
The flavours get smoothed down so much it's not worth using anything expensive or even using fresh beans.
The only thing that ruins cold brew is burnt flavours or being too weak.

are you talking prepacked or bulk? if bulk, avoid. they go stale quick in the bins and usually dont have a marked roast date so they could have sat there for months. for prepacked stuff, anything with a marked roast date within 4 weeks is going to be decent. there is a good chance your local roasters sell to grocery stores in the area so check out some of those.

nothing wrong with trying some out just to see, though. and depending on your brew method it might not matter that much. if you're doing pourovers it could be good to buy some cheaper beans just to get the hang of the method and see how changing things affects the taste in the cup.

If it counts for anything, IMS also has 57mm baskets. I'm also gonna buy the accessories as soon as the machine is here and I know it works, anyway, and I doubt I'll be buying more after that. Honestly I really did consider the Gaggia, but I cannot for the life of me understand why a $500 machine doesn't come with a manometer or any form of temperature control (I'm aware of Gaggimate and Gaggiuino, and I do have some experience with electronics, but I honestly don't want to fuck around inside a machine when I've never owned one before). Those were really the main reasons why I went with the Anna, that and because it's on sale. I do understand not wanting to go proprietary, though. Why the fuck they couldn't have just made it an extra milimeter wider is beyond me. My flair 58 preorder came with an unbranded IMS. Its the first thing I replaced with a pullman 876, then a high flow billet basket after, then stepdown and convex baskets. They all make very different coffee and its handy to have options.

Literally what I do. $20 switchbot on the flair58 controller flips it on 10 minutes before I wake up. Turn on kettle, take piss/shit, pour milk into Dreo Baristamaker, pull shot. Cappuccino 3 minutes later without having to fuck with a steam wand.

That was part of my considerations. I'm not a fan of char roast but I barely drink anything lighter than medium these days. I think shitty italian burrs sound like a good match for my shitty italian-style 'presso. That, and I've survived off a C2 for years. My standards aren't that high at this point, if it's stepless then it's good enough for me. I've gotten pretty good at dialing by weight because with some beans the C2 gets into that situation where a click finer chokes the Flair and a click coarser makes soup (Slop or underextracted piss). That said, I didn't even want to go with Eureka OR the DF at first because I keep hearing that conical is the way to go for dark and full bodied. Unfortunately, the Fellow Opus 2 is too plasticky and the Timemore Brick is apparently not that good. Could've gone with Baratza, but I went with flat burrs in the end just to try something new (And because an anon last thread swore that Baratza is e-waste).

Also fair enough on your morning routine, doesn't sound too different from what I'm trying to do. Piss and shit should come after coffee, though, that's non negotiable.

my hypothesis is that i can create caramel coffee by dutch processing my light roast and then deaminating some glutamine and making glycation products with glucose at a high ph. i've tried it before with some darker roasts but it ended up tasting like biscoff cookies. the light roast should give a different flavor

update: tastes nice, sweet and sort of a light grain taste
a starchy and smooth mouth feel
kind of reminds me of a light rice milk
fit about 9g in it
could do more if ground up but im not really interested in that
colour is a super light goldish yellow
i dont often have tea but this is a nice little break to have and watch the sunset

The Mignon is fine. Their regular espresso burrs are good at making traditional shots. And the 50mm brew burr is very unimodal according to the Coffee Chronicler. What you need to do though is to remove the declumper in the exit chute as it causes a large amount of retention. Adding a tilt stand and bellows to that would make it more or less zero retention.
Also I've always wondered if adding a little lithium grease to the end of the bottom of the motor axle that contacts the grind adjustment arm lever might reduce friction and wear at that point a bit.

I suspect Eureka Peppe is basically the same grinder in a different housing so that could be an option if it doesn't arrive. It comes with the brew burrs but the espresso burrs are only $30 or so.
