The first time Ty Lee used it on Katara during the fight in Omashu, she is still able to freely move. They even have the line from Mai mocking Katara that she can't fight without her bending which is rebuffed by Sokka coming in proclaiming he gets by with out it. It seemed like they were setting up Ki blocking was an explicitly anti-bending technique that was basically worthless against a non-bender. Then the next instance it did full paralysis making it effective against even non-benders. Honestly would have prefered if it stayed the first way, gave it a more interesting dynamic of a kind of rock/paper/scissors and meant non-benders weren't just entirely cucked and basically required to have it going forward. I mean Ty Lee was able to wipe out crowds of people meanwhile Mai wasn't allowed to draw blood it just left you wondering what the point of even having Mai was. Also more interesting to me the idea it just blocks the spiritual movement within ones body as we already know that benders need to physically move.

What the hell even is "Super Science"? My best guess is that the term is a joke about how most research and engineering in science fiction have implausible if not impossible results like shrinking people down to microscopic size or time travel, kinda like how Rick and Morty calls what happens in that show "sci-fi" despite not being fiction from an in-universe perspective, I just don't understand why anyone in-universe would make such a distinction. The only direct hint of this that we get is that Professor Von Helping's botany lab is somehow distinct from "super science" and seems to run realistic experiments like "Let's grow potatoes in different types of soil to see which gets slightly larger".
